Ideas for Using Cauliflower

I just picked up my co-op shipment today and with it came cauliflower. I'm wondering how other moms' kids like cauliflower. I've never bought it, just eaten some here and there. Any recipe ideas?

Will it last if I go ahead and cut it up into florets so we can just pick out handfuls to snack on?

Boil or steam them until soft and then mash them with butter ( and cheese, garlic, salt, whatever you like) just like you would mashed potatoes. My daughter and nephew both love them. I even tricked my vegetable phobic in-laws into eating them. They had no idea they weren't eating mashed potatoes. Also you can steam them with a mix of whatever other veg you like ( brocc, squash, peppers, snap peas, green bean) and then toss them lightly in butter, garlic, dash of olive oil and fresh dill.

Ooohhh...I love cauliflower even if I hadly ever cook it myself.

Steamed with a little cheese sauce is delicious.

One of my favorite mediterranean restaurants serves it deep fried...no breading or anything, but nicely browned all over. I know, not the healthiest, but delicious with hummus or tabouli.

Also steaming it soft and pureeing with milk and butter like mashed potatoes is especially delicious.

Also, served with chicken and peanut satay sauce is yummy.

A classic way to cook it is:
put it in a baking dish, and make a bechamel sauce for it.

Bechamel sauce is a French white sauce. Which can also be used for MANY things. Such as: making it with Endive. Get some endive, wrap deli ham around it, put it in a glass dish in nice neat rows. Then pour the bechamel sauce over it. Then bake it, until done and the endive is soft etc. Super yummy! To me, the bechamel sauce always tastes better when baked until the tops are toasty.
Or, use the Bechamel sauce over any cooked/baked veggies, or just to dunk good French bread into.

So anyway, with Cauliflower, what you do is, just stick the cauliflower in a glass baking dish. After you finish making the bechamel sauce, pour it over the cauliflower.
Then stick it in oven and bake it at like 350 degrees... until it is soft.
The bechamel sauce will brown on top... and that to me is so yummy.

Its a great french dish. Easy. Yummy. My kids like it too.
In my family, my Husband makes it. It being his thing.

I steam mine, then drizzle a little bit of olive oil and sprinkle with parmesean cheese and red pepper flakes for spice. A little salt and pepper and you are good to go! Easy and tasty...but those flakes can get hot! It is very healthy dish if you don't overdo the olive oil!

You know that you can make mashed cauliflower. It tastes almost exactly like potato.

Steam with butter, salt & pepper.

Or....bread pieces and fry...like fried zuccini.

When I make home made mac n' cheese, I sub the pasta for cauliflower. Yummy. Mashed cauliflower, raw, to me it's all good.

I have a really good Broccoli/Cauliflower recipe. All you do is fry up some bacon and cut up the broccoli, cauliflower, onion, and some shredded cheddar cheese and mix it all together. Then stir together 1 cup or so of miracle whip, 1/4 cup sugar, and 2tbls vinegar and mix into the veggies and top with the remaining bacon. I think i usually use a bit more miracle whip because i like it just a little creamier. This is very good though and not to hard to make!
