Ideas for Dinners
I was wondering if anyone knew of a good cookbook containing quick recipes that young kids might eat, or maybe some suggestions for recipes or dinner ideas. I have three very picky eaters! They usually eat a pretty good breakfast and lunch. I really don't have a lot of time to spend in the kitchen, but I do want to start preparing more healthy meals for dinner. Thanks:)

I am not a cook, but I feel like one whenever I prepare one of Rachel Rays 30 minute meals...granted, they take longer than 30 minutes when I try a new meal, or when my little one is looking for attention. There is a great variety of foods (all on the healthier side) in her cookbooks (my fav is 365 No Repeats). Her magazine, Everyday with Rachel Ray, has good recipes as well and always includes a kid's recipe that they can make. Whenever I am looking for something new, I always go to her recipes first because they are easy and tasty.

When my son was five, he wanted to help cook. So, I got two great cookbooks. FamilyFun Cookbook by Deanna F. Cook & the experts at the magazine & Betty Crockers Kids Cook!. He still loves to help cook and will eat what he makes.

I just borrowed a book from my public library called "Super foods for Children" by Michael van Straten and Barbara Grigs. It has great information about different foods and their nutritional value as well as some great looking recipes for kids from 4mths to teen years. It's easy to follow and set out in a logical manner. I've found the library to be a good place to go when I want to try out a cook book. If I find I like a number of the recipes in it I'll hope on line to amazon and buy it for myself.

familyfun.com has tons of kid friendly recipes. Rachel Ray has lots of kid firendly recipes onher website and magazine. I'm sure she has a cookbook out for kids too. There are 2 different cookbooks out that have sneaky ways of throwing in healthy things. Deceptively delicious and the sneaky chef I think. check them out on amazon.

My best friend is a Southern Living at Home consultant... their cookbook "Easy Weeknight Favorites" is full of family friendly, tasty dishes. My self-proclaimed vegetarian 10 year old is crazy for the creamy chicken casserole. Everything is quick and easy to prepare with lots of eye appeal and simple ingredients.

Deceptively Delicious by J. Seinfeld (Jerry Seinfeld's wife). This book uses recipies which hide fresh vegetable purees in yummy foods, so kids don't even realize they're eating healthy. GENIUS!!

I make mostacholi (or what i call my version of mostacholi) :) and my kids absolutly love it!!!! I have twin 7 year olds, a 10 year old a 13 year old and a 16 year old. Its really easy I just fry up ground beef, put a jar of ragu traditional in it boil elbow noodles, keep the noodles separate from the sause, then i take grated cheese (which ever you prefer) (I find I like to use mozarella mixed with another cheese, or just mozarella alone)Get a cake pan start layering the noodles on the bottom first, then a layer of sauce,then a layer of cheese,and repeat again making sure the layer you end with on top is cheese. then pop it in the over at 350 degrees for about 20-25 min. let it cool for 5 min when you take it out. I serve it in bowls. My kids would eat this every day if i let them. :) good luck P.
