I Need Suggestions on Healthy Recipes

I need your help Mamas..My 17yr old daughter is currently in the hospital with pancreaitis due to problems with gall stones. She is going to have her gall bladder removed but they are going to wait until she is completely healthy. She is currently on a clear liquid diet. The doctor told me she will be on a pretty strict diet once she is released. Everything has to be baked and not fried, nothing with alot of fat, cut down on the dairy, no fast food and no sauces or gravy. I am at a total loss of what to cook once she gets home. I can think of ideas for breakfast and lunch but I'm at a loss for dinner ideas other than baked chicken and rice or potatoes with a little seasoning. I hate to admit that I probably feed my family pretty unhealthy....but with the kids schedules, we usually leave the house at about 7:00 am and don't get home until about 8:00pm. Where do I fit a healthy dinner in with that schedule? Unless I do all crock pot meals?

Thanks ladies..i will definately try the suggestions. I think I just need to get on a better schedule and prioritize a little better. Ill probobably try freezing meals on the weekends so I can just pull them out and heat them up once we get home in the evening

We grill pretty much every night (in the winter we use an indoor grill). We eat mostly chicken and steak which only takes minutes to cook. We use lots of different seasoning so it doesn't always taste the same. For sides we do fresh raw vegetables and fresh fruit.

I'm sorry for what your daughter is going through. Wishing her a speedy

-homemade lasagna (you can make it ahead of time & freeze it)
-tacos (shredded chicken or lean ground beef) use corn tortillas for less
fat. warm them up/don't fry them.
-baked fish
-homemade stir fry (chicken, red/green peppers, onions, pineapple if you
don't mind, low sodium teryaki sauce/glaze
-tacos w/15% lean ground beef
-any and all veggies grilled
-taco salad (lean ground beef, kidney beans, diced tomatoes, diced red
onion, shredded cheese, low fat cheddar cheese, low fat thousand
island dressing
-grilled fish
-bbq chicken on the grill (or plain)
-baked fries (slice your own potatoes & bake. you can spray w/Pam for a
bit of crisp)
-grilled chicken & veggie kabobs on the bbq
-homemade chicken/veggie soup

I had my gall bladder removed a few years ago and I was miserable. I felt like anything I ate was going right through me and my weight kept dropping. Which is a good thing but it got down pretty low.

Like the doctor said low fat foods, stay away from anything fatty-bad fats, good fats are okay. Make sure she drinks lots of fluids and making fruit shakes aren't a bad idea with protein powder added. She'll be able to keep it down.

Different people react differently when they have their gall bladder removed. My friend's mom could eat the same way she's always eaten-no problem.

I couldn't. I even had trouble eating lettuce and it was a year later before I could eat it with out any problems.

So just because one person says something, keep an eye to see how your daughter reacts and just do trial and error.

FOD is a neurological disorder where the body can't break down fat to make energy so for people who have this it is critical that they eat a low fat diet. Some of the tips on here should help you out. I have an FOD so I must say having my gall bladder helped me to stay on top of things and be good.

And then just google low fat recipes and see what you come up with. Campbell's is a good one, Allrecipes.com, food network-and look under healthy recipes, eatingwell.com is one of my favorites.

My husband went through the same thing last November, and we were given the directive to do an "ultra low fat diet" but not much guidance as to what that meant, unfortunately (I was surprised and frustrated by this!). We were not given a "limited dairy" but just told to stay away from fat.

Basically, I started reading every single label on every ingredient, to try to keep the total fat content (per day!) down to 10% to 15%. And note the serving size--some things may seem "low fat" but if you eat them in a realistic serving size, you'd end up with too much fat in the diet.

We ate a lot of beans and rice, with stir fried or sauted veg (using non-stick cooking spray or 1/2 to 1 tsp oil). Lentils are also good with rice or beans.

We ate a lot of of chicken cooked in broth or 1 tsp of oil (measured with a measuring spoon, not guesstimated!); season it up with seasonings to help add flavor. You can do chicken & gravy type things, but only if you use 99% fat free cream of chicken (or mushroom, etc) soup, maybe thinned w/ some broth.

And a lot of spaghetti (read the sauce labels, especially, as well as the noodle labels, though--a lot of spaghetti type sauces have a lot of fat in them; we were able to find one brand that had only 2% fat in the sauce).

Another thing that helped was cooking with TVP (textured vegetable protein)--it is very high in protein and very low in fat. It can be substituted for crumbled ground beef in recipes and has sort of the same texture. So I did following recipes with TVP in place of ground beef:
* Stuffed peppers
* Tacos/Mexican (skip the shells or wraps though--those often have a lot of fat in them; I was only ever able to find 1 brand of burrito wraps that had 5% fat per serving and the other brands were higher)
* Spaghetti
* Vegetarian chili

Really, subbing TVP for the meat helped a lot in our case. You can get TVP sometimes in the baking section of the grocery store, near the specialty flours (the kind we bought was Bobs Red Mill, I think?), or in the "vegetarian section". If you can't find it in your local grocery, ask, or try the Whole Foods nearest you. I'm sure you can order it online, too.

You might check out the Boca Burgers/Morning Star burgers or crumbles, or using tofu (not sure about the fat content on those, but worth a look!). There is also a fungus based (I think like mushrooms?) protein called Quorn that you could try. I've only ever seen it at Whole Foods, though.

Veggies--we ate a lot of steamed veg or raw salads, with only fat-free dressings. Some of the veg in the freezer section come already prepackaged in steamer bags, but be careful, if they have any sauce or seasonings, to check the fat content. We used garlic powder and/or fresh ground black pepper on the steamed veg to add flavor.

My DH started eating non-fat greek vanilla yogurt and a small bowl of Kashi cereal (which has very very little fat) for breakfast. Oatmeal and non-fat milk is another option, though most cereals are pretty low in fat, especially if you eat it w/ skim milk.

For sweets, get fat free jello and fat free pudding. I think I've seen 0% or very low fat frozen greek yogurt in the freezer section, though we haven't tried it out. She might be able to do a fat free smoothie by using this recipe: 1 or 2 T fatfree instant pudding powder + 1 cup skim milk + 1 cup frozen fruit (we like berries) + 1 T honey if desired; blend all ingredients until smooth.

Fruit,vegetables, grains and lots of fluids are good for liver,gallbladder,kidneys and healthy cholesterol levels. No sugar.
Ground beef as any other ground meat even turkey or chicken is BAD.
I have problems similar to your daughter, and this is my actual diet, basically no animal protein (that means no dairy at all -no eggs, no yogurt, no cheese,no cream, not even low fat; no red meat, o chicken) However all of this may be added to the diet slowly and occasionally once your daughter get better and her health is TOTALLY balanced.
I eat/drink:
Whole wheat pita bread filled with avocado, lettuce, tomato, little bit of onion.
Lettuce salad and tuna,little bit of onion,tomatoes, olives, with a dressing of olive oil, lemon, and salt.
Lentil soup, plain or with spinach and onion added. It doesn't have to be a lot of it;it is just to add some flavor.
Bean soup (same as above)
Salmon and a baked potato
Toasts with honey or agave nectar
Almond Milk or Soy Milk (chocolate flavored or vanilla flavored, or just plain (not for me!)
Crackers and vegetable spread like Smart Balance, or honey
Cranberry Juice (I pulverized my kidney stones with this, and now I drink this everyday)
Pasta and rice dishes with steam vegetables, the best is whole grain pasta or rice since the white pasta becomes sugar in the digestion process.
Salad fruit
Potatoes cut in wedges with a little bit of olive oil, herbs and salt, cooked in the oven.
Lots of water!

I have switched from ground beef to ground turkey and my family hasn't noticed the difference. Way less fat.

Hi! Something we almost always have in the fridge a variety of roasted veggies. Let's see, right now I have roasted tomatoes, zucchini, onions, peppers, broccoli, cauliflower, and leeks all ready to go, most any veggie you like. Carrots are a favorite but I'm out. Mostly they go into wraps, burritos, or whatever quick handy thing we have around. I also have beans, squashed and unsquashed to add for protein. Refried beans do not have to be fried, just beans mashed. Makes a great veggie lasagna too except the cheese won't be good for her, maybe you could try the fake cheese? The roasted veggies are sweet so you can just add them to rice.
I also poach chicken and cut it into cubes. Freeze it on a cookie sheet and then bag it so you can pour out just as much chicken as you want, it thaws in minutes.
Does she like polenta?
Sweet potatoes and regular potatoes can be baked ahead.
I'm big on prepping. I never know who is coming or going when. Last night I thought I was going to be all alone and I ended up with everyone home. Took little minute steaks, cut from a roast and individually frozen, on George (does everyone love their George Foreman grill as much as I do?) Popped some stuffed potatoes into the microwave (to thaw) and toaster oven (to crisp). Sarah and I ate some roasted broccoli and cauliflower, the boys ate corn (oh yeah I have that in the fridge too, fresh corn off the cob- it was supposed to be corn salad but they ate it all before I added anything else) and we all had tomato, basil, fresh mozzarella salad. We were eating within10-15 minutes.
Do you kind of get the idea? It's late and I may be too disjointed... But all this can be done ahead and then can be put together quickly. We do lots and lots of chicken. I buy 40 lb at a time and have to do something with it all at once. Let's see, it's 10 lb bags- one bag I poached, one bag I cut into chunks, marinated and froze in 4oz. portions, one bag I chopped and made sausage, the hard part of sausage is the casing., skip it and it's easy. Put away in 4oz patties. The last I did put away as half breasts.
Sausage! Make your own fat free sausage. Super easy and the flavorings are unlimited. Sometimes I use chicken, sometimes I use pork, but always fat free.
With the exception of the things I add cheese to everything is made with no more than a good spray of Pam.
I hope she feels better soon!!!
