I am making a special dinner for my husband tonight since he has been working really hard and I want to show him some thanks. I have two Fillet Mignon steaks and I need either a marinade or a sauce. The ingredients I have to work with are limited. I have oregano, parsley, milk, flour, salt , pepper, fresh garlic, and Onions. oh and butter. So any advice would be helpful! :) thanks a bunch

What can I do next?

Never marinate a filet! Use kosher salt and fresh coarsely ground pepper. Put a small amount of butter the pan once it's hot and then put the steaks in. Depending on the thickness cook for approx 2-4 minutes each side. The steak will still have some give if you push on it but it won't be too firm and it won't be too soft for a medium-medium rare. Just watch it closely if you aren't used to cooking filet.

After they are done let them rest on a plate for 5 minutes to allow the juices to redistribute into the meat. If you cut them too soon the juices just run right out.

yes-don't marinate! Too good of a cut-marinade is best with tougher steaks. I like it done in just butter-like Ruth Chris steakhouse does it.

Don't marinade a filet, it takes away from the natural delicious flavor. You can salt and pepper it but don't do more than that. Also, I wouldn't cook it much over medium.

Just a little salt and pepper to bring out the natural flavor of the meat.

The beauty of a nice filet is that you just salt and pepper it! Don't marinade this particular cut of meat. You could make a nice onion garnish, though.

-Slice the onions thinly
-Melt the butter in a large skillet over medium heat
-Saute the garlic until tender
-Add the onions and liberally salt them
-"Sweat" the onions until they are transparent and soft.

Onions with a good steak are great! If you have mushrooms, do the same!

Do you have any bacon? We always wrap the edges of ours with bacon, held on with a toothpick, and then just lightly salt and pepper. DON'T OVERCOOK THEM!!!

You don't need to marinate filet mignon! BUT if you want to---olive oil or Italian dressing works.

Just a lil' salt and pepper...seer/sear (mom brain, dont remember how to spell this) both sides, throw it in the oven to finish it off, when its almost done add a pad of butter on top of both and let it melt!

Buy some mushrooms and cut up the onions and carmalize both together...easy and delicious!

I never marinade steaks. Quality steaks don't need marinade.

Now, a sauce for the side can be nice. I use a demi-glace sauce with shallots and mushrooms and serve it on the side. We usually put the sauce on rice and don't put anything on the steak.

I hope it turns out great for you. You sound like you are very special to your man.

Salt and pepper only, and cook it rare or med rare. Also, you can slice up some onions and saute them in butter. Let them cook down and caramelize, and these are a nice little addition to steak.

I agree A., you do not marinate filets. You might put a nice dry rub on them, but since you don't have much time, I would just suggest some sea salt, pepper and maybe some garlic powder or a paste of the fresh. You might try something like offered at eating well.com, http://www.eatingwell.com/search/apachesolr_search/filet%.... Have fune and enjoy your celebration. D.
