Does anyone have a good homemade spahetti sauce recipe? I don't mind if it is a long process. I just want something new and different.

I got this one from Martha stewart and it is really fast and easy.

Put a couple tablespoons of olive oil in hot pan. Add some red pepper flakes (maybe a 1/2 tsp or 1 tsp.) and a couple cloves garlic (minced). Let the oil infuse with flakes and garlic. Add a large can of tomato sauce (I use hytop brand) and your choice of dry or fresh herbs. I usually do oregano, basil and parsley. You can brown meat first and then make the sauce too. It makes a great marinara. You can double the recipe to--just taste as you go along. The nice thing is it is quick--maybe 10-15 minutes. Serve it over noodles.

Its always easier to start with sauce, but if you don't mind the extra time try a tomato puree instead of the sauce. I add fresh (or dried if you don't have fresh - its really all the same) basil, oregano, I like a little sage, a little maybe a few tablespoons or red wine, garlic - fresh run through a garlic press. With or without ground meat - it doesn't matter. Simmer 30 minutes for tomato sauce 1-2 hours with a puree.

Also check the food network for Giada De Laurentiis - she has great sauce recipes she has a show Everyday italian for a few options.

Yes. This one will take ALL day, but its delicious. I have no measurements. I am an Italian New Yorker and always make my own sauce. I make mine in a crockpot.
4 lg. cans of Puree
2 sm. cans of paste
fresh gloves of garlic
red wine
salt and pepper
basil leaves
sugar
grated parmesean cheese
Italian sausage links

Dump the puree in the crockpot and add a little water. Take the paste and lightly fry in a pan with olive oil, garlic and paste. Add to the crockpot. Fry the sausage so that its browns and add that next. Mix it all together and add your seasonings and a couple handfuls of cheese, some red wine and some sugar. Taste it and see how you like it. Let it cook all day on low...thats it!!
You can also fry any meat and add to the sauce (pork ribs or chops) Enjoy!

My family is Italian so everytime I make sauce, it is a little different becuase of what I add, etc. I use no measurements.

However, I found and use this recipe from Everyday Italian and we love it. It is a little different from traditional marinara. Again, I add or delete spices that my family especially likes or dislikes. This also freezes well.

Homemade Marinara

1/2 cup extra virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 celery stalks, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
2 (32 ounce) cans, crushed tomatoes
2 dried bay leaves

heat oil on medium high, add onions and garlc until onions are translucent, about 10 minutes. Add celery, carrots and 1/2 teaspoon each of salt and pepper. Saute until all veggies are soft, about 10 minutes. Add tomoatoes and bay leaves, simmer uncovered on low until sauce thickens, about an hour. Remove and discard the bay leaves. Season sauce with more salt, pepper to taste.

I add a touch of red pepper flakes.
