Help! Mahi Mahi/other Fish Recipes
I bought some Mahi Mahi from Schwans and I have no idea how to prepare it. I have some seasoning that you put on fish that is supposed to be really good but I don't know what to do with it or how to cook it. I'm afraid that I'm going to over/under cook it. Any advice on how to cook fish would be appreciated!

I have found that broiling fish is super easy. 5 minutes each side under the broiler. If the fish is thin and you are worried about it drying out, you can brush it with olive oil on each side before seasoning it. (This also works great for pork chops!)

A good marinade is:
1 part lemon juice
1 part low sodium soy sauce
2 parts Kraft Zesty Italian Dressing
For Oven:
Preheat 350
Marinate for 30 minutes to an hour.
Wrap fish in aluminum foil and bake for 20 minutes or until fish is easily flaked.
For Grill:
Preheat Grill
Marinate for 30 minutes to an hour.
Wrap fish in aluminum foil and grill for 20 minutes to an hour.
You can screwer veggies and bake or grill them, basting with a mixture of the same marinade.
Another yummy recipe (which is GREAT for Tuna and Tilapia too)
Get 2 medium mixing bowls. Using a metal whisk (or fork) whisk together the ingredients below.
Make the recipe below twice. (so you will actually need 2 of everything)
Set one batch aside.
1/4 cup Sherry
1 Tbsp. honey
dash asian chile sauce (this packs a punch, so just a dab)
1 lime juiced
2 Tbsp. low sodium soy sauce
3 cloves garlic
2 tsp. minced fresh ginger (or 1 tsp. ground dried ginger)
olive oil
Preheat oven to 350.
Place fish in baking dish.
Pour once batch of marinade over the fish.
Bake for 20-25 minutes or until fish is flaky.
Meanwhile, pour second batch into sauce pan and cook over medium heat, stirring often.
After about 5 minutes of simmering, the marinade will reduce to a glaze.
When fish is cooked, remove from baking dish and plate it.
Drizzle glaze over fish.
I usually serve this with Curry Cous Cous and a veggie, like mushrooms.

Whenever I'm in doubt about cooking a new dish, I rely on www.foodnetwork.com or www.meals.com for recipes. You can get easy to difficult recipes from the foodnetwork website from very famous chefs or you can get easy, less complicated recipes from meals.com. The great thing about meals.com is you can enter the type of meat you are going to use, i.e. fish or ground meat,and it'll give you all kinds of recipes for that meat.

My favorite way for this or Talapia is to season with salt, pepper, and lime juice. Then I either cook it on The George Forman Grill, outside gas grill or a teflon pan. If using the George grill or a teflon pan, I coat it with Pam then place the fish in Geo or the pan until one side is brown and then flip and brown the other side. If the fillets are thin (under 3/4") it only takes a few minutes. I spray the teflon pan again when I flip it. The fish will be flakey when done. Do not overcook it or it will be dry.
If you use the outside grill, you will need to place it in a foil (tray). Just make a small tray out of foil doubled with the sides folder up to look like a tray. spray it with pam. You may have to turn the fillets on the grill just like in the pan .
I also add a small amount of butter to the top to melt before I serve it. Very easy, fast,healthy and tastes great.
i do the same thing to samon except I also add dill to it. hth
