Hello Moms,

I need recipes. HEALTHY, but tasty, recipes or meal ideas I can make for my whole family. Myself, my husband and my 2 year old. We're not picky so bring 'em on! As many as possible would be wonderful! And not just dinner but breakfast and lunch as well. I realize that there are hundreds of websites with recipes, but I would like some tried and true ones that moms have fed their families.

Keep it whole and simple. Kids like things best separated and without sauces (so I've found). Things my kids like best for example are:
broiled salmon, steamed broccoli, and brown rice or
pork chop, mashed potatoes, and green beans or
chicken, quinoa, and sweet potatoes.
Keeping it simple and easy is best and you can lightly season and add butter if wanted.

HEARTY TUNNA CASSEROLE

Prep time: 15min Cooking time 1 hr

¾ lb Kraft Process American Cheese, cubed (or Velveeta)
1 can mushroom soup
1/3 cup milk
3 cups cooked noodles, drained
1 pkg (10 oz) frozen peas, thawed, drained (if freezing no need to thaw)
1 can tuna, drained, flaked (I use 2 cans)
¼ cup finely chopped onion (optional)
½ tsp salt
½ cup crushed potato chips (or nacho Doritos)
Heat oven to 350. stir cheese, soup, and milk in large saucepan on low heat until melted, stir often. Stir in noodles, peas, tuna, onion, and salt. Spoon into greased 2-qt casserole. Top with crushed potato chips. Bake 1 hr. Makes 6 servings.

Chicken & Broccoli

1 can cream of chicken soup
2 Tbsp milk
¼ tsp. curry powder
2 pkg frozen broccoli (or bundle of fresh cut sm. Pieces)
2 cups cooked chicken (cubed or shredded)
2 Tbsp. butter
½ cup sour cream
½ cup slivered almonds (optional)
¼ lb grated cheddar cheese
½ cup bread crumbs

Cook broccoli. Combine soup, milk, sour cream, curry powder; stir til smooth. Place broccoli in greased casserole, cover with chicken. Pour soup mixture over top; sprinkle with cheese, almonds. Melt butter and use to cover the bread crumbs, then top casserole with bread crumbs. Bake 35 min. at 350. (may have watery stuff at bottom of casserole just use slotted spoon )

Frito Chili Pie Casserole

3 cups Fritos brand Corn chips
1 large onion (optional)
1 can chili
1 cup grated American cheese or cheddar cheese

Place 2 cups of Fritos in a greased baking dish. Arrange chopped onion and half of grated cheese on the corn chips. Pour chili over onion and cheese. Top with remaining corn chips and grated cheese. Bake at 350 for 15-20 minuets. Makes 4-6 servings.

Other option is to have buffet line; put chips in bottom of bowl, top with chili and cheese.

Hamburger Pie (Quiche)

1 lb hamburger, sausage, or ham
1 chopped onion (optional)
1 can drained sweet corn (optional)
Green pepper (optional)
Salt & Pepper (optional)
Cheddar Cheese
Brown beef & put in center of greased pie plate or casserole dish. Top with onion, corn, green pepper. Sprinkle cheese.
3 eggs
1 ½ cup milk
¾ cup bisquick
Beat and pour over all. Use spoon to push down until all is moist.
Bake at 400 for 45 min. or lightly browned.

Beef Taco Bake

1 lb ground beef
1 can Tomato soup
1 cup salsa
½ cup milk
6 flour tortillas or 8 corn tortillas (cut or torn in 1 inch pieces)
1 cup shredded cheddar cheese
Brown beef and drain. Add soup salsa, milk, tortias, and ½ of the cheese. Spoon the mixture into greased 2 qt shallow baking dish. Bake 400 for 30 min or until hot. Sprinkle with remaining cheese. Serves 4

Beef Enchiladas

1 lb ground beef (browned)
1 can enchilada sauce (Pace or Hyvee Brand)
1 cup sour cream
1 jar (16 oz) salsa
Flour tortillas
Monterey/Jack cheese
Brown Beef and drain beef. Combine sour cream, salsa, most of the enchilada sauce. Warm tortia for 7 sec in microwave. Place spoonful of beef in middle of tortia add scoop of sauce and some cheese. Roll tortia put in greased dish continue with rest. Pour remaining combined and plain enchilada sauce on top, try to cover completely. Bake 400 for 20 min. Sprinkle with cheese and bake additional 5 min.

Stovetop Chicken or Easy Chicken Bake

1 pkg Stovetop stuffing mix
1 ½ lb boneless chicken breast (I use 1 ½ raw chicken breast)
1 can cream of chicken soup
1/3 cup sour cream
1 bag (16 oz) frozen mixed vegetables
1 cup hot water
Sprinkle ½ cup dry stuffing mix onto bottom of 13x9 inch dish, top with raw chicken cut in cubes. Mix soup, sour cream and vegetables; spoon over chicken set aside. Mix rest of stuffing with hot water, stir just til moistened, spoon over vegetable mixture. Bake 400 for 30 minuets. Makes 6 servings.

Hash brown ham quiche

4 cups frozen shredded hash browns
¼ tsp salt
¼ tsp pepper
3 Tbsp butter, divided
1 medium onion, chopped
½ cup chopped green pepper
½ cup fresh mushrooms
2 tsp flour
¾ cup diced cooked ham
3 eggs, beated
½ cup milk
½ cup shredded cheddar cheese

In a large skillet sauté the hash browns, salt & pepper in 2 Tbsp butter until golden brown. Press intothe bottom and up the sides of a greased 9inch pie plate.
In same skillet sauté the onion, green peppers, & mushrooms in the remaining butter. Remove from the heat; sprinkle with flour. Stir in the ham eggs and milk. Pour into hash brown crust. Bake at 350 for 25 minutes. Sprinkle with cheese and bake additional 5 minuets. Let stand 10 minutes before cutting.

Buffalo-style chicken fingers

1 cup crushed corn flakes
1Tbsp parsley
¼ tsp salt
1 pound skinless, boneless chicken breast
1/3 cup blue cheese or ranch dressing
2 tsp water
1-2 tsp bottled hot pepper sauce

Combine crushed corn flakes, parsley & salt in shallow bowl or plate. Cut chicken into strips about ¾ inch wide and 3 inches long. Combine the salad dressing, water, and hot pepper sauce in a large mixing bowl. Add chicken; stir to coat. Roll chicken pieces individually in crumb mixture to coat. Place strips on a foil-lined baking sheet. Freeze until firm.
To serve, heat oven 425 degrees. Bake for 18-20 minutes or until meat is no longer pink.
Orange Salad

2 pkg orange jello
1 cup boil water
Dissolve jello in water
1 can frozen orange juice (6oz)
1 cup cold water
1 can mandarin orange with juice (6oz)
1 can pineapple tidbits with juice

Mix and refrigerate until firm.

I really like pampered chef's recipes...so easy, fast...like healthy cooking for "dummies"-:) Me, not you! Delicious, healthy, meals in minutes!!!

These are a couple of my favorites:
Smoky BBQ Chicken Sandwhiches
1 1/2 lbs Boneless Skinless chicken breast
2 teaspoons Garlic Oil
1 1/2 tbs of Smoky BBQ Rub
Large Onion and Pepper
24 Soft Dinner Rolls

Place Chicken in Deep Covered Baker. Brush with Garlic Oil. Sprinkle with
BBQ Rub. Place in Microwave 13 minutes. Remove and Chop chicken with Salad
Chopper. Meanwhile cut onion and pepper and saute on stove top until tender.
Slice dinner rolls.

Morroccan Fried Rice
2 Boxes Rice A Roni Fried Rice
2 Tbs. Morroccan Rub
1 Tbs. Spicy Pineapple Rum Sauce
1 1/2 lbs of Boneless Skinless Chicken
1 Small Red Onion
1 Red/Yellow/or Orange Sweet Pepper
1 Cup of Snow Peas

In Deep Covered Baker, place chicken. Spread Spicy Pineapple Rum Sauce onto
chicken. Then sprinkle 1 tbs of rub onto chicken.

Optional - Slice Onion and Peppers. Add Snow Peas to baker or Grill in Grill
PAN. When adding to grill pan add 1 tbs of Garlic Infused Canola Oil.

Place Baker, covered in Micro Wave for 14 minutes. Cook the same time even
if you add veggies.

To cook rice, place Rice A Roni in Rice Cooker Plus. Add both boxes and 1tbs
of oil or butter. Cook in microwave uncovered for 1 min. Remove and stir and
place again in Microwave uncovered for 1 additional minute.

Remove, add seasoning packets and 1 tbs of morroccan rub. Add 4 cups of
water. Place lid on Rice Cooker Plus place cooker in microwave for 11 min.

Chop chicken and mix in rice....SERVE !!!
Yummy !!!

Southwest Chicken Fajitas
1-2 lbs Chicken
1 Tbs Southwest Seasoning (I will bring this with me)
1/2 tbs Oil
12 Flour Tortillas
Jar of Salsa
Medium Onion
Red Pepper
1 10oz Cheddar or Colby Jack Cheese
Sour Cream, Roma Tomatos, Green Onion, lettuce if desired
In Deep Covered Baker, place Boneless skinless chicken. Cut Onion with
Mandolin and Pepper. Brush Oil on chicken and sprinkle Southwest
seasoning. Place in microwave , covered for 14 minutes.
Dice tomatoes, green onions, place in Bamboo Round Bowls. Add sour cream to
bamboo bowl and salsa. Place bowls on bamboo cracker tray. In medium Bamboo
bowl, grate colby jack cheese.
On Large Bamboo Platter, place flour tortillas. Remove chicken from
Microwave, with salad chopper chop chicken mixture as desired. Place in
Large Bamboo Bowl and set on Large Platter.
Have your family or guest put together their fajita as desired.

I make a hotdish my Mom used to make called Heavenly Hash.

1# ground beef 1 can of corn
1 can of Vegetable soup 1 lg can of whole tomatoes
1/2 onion, chopped 1 package of noodles

Brown the ground beef and onion in a frying pan. Boil noodles until done and drain. In a crock pot or large pan add the beef mixture and noodles. Add the vegetable soup, corn and tomatoes. Chop up the tomatoes. You can also add a can of peas, if you like. Boil until everything is hot and well mixed. Serve hot. Very good with buttered bread or rolls.

Good luck, it is really good and my family likes it alot.

Breakfast burritos: whole wheat flour tortilla, 2 tablespoons or so of black beans, 2 tablespoons salsa, 1-2 scrambled eggs, 1/4 cup cheddar cheese. I usually assemble them, then pop them under the broiler for a minute to melt the cheese.

Spinach/tomato pasta: Cook 2 cups whole wheat pasta (any shape, measure out 2 cups uncooked, it will be more when you cook it). Meanwhile, in a large saucepan w/ lid, cook 1/2 pound turkey sausage until well browned (drain off fat if there is any). Add 1 can diced tomatoes, any flavor, 2 tablespoons italian salad dressing, 6oz spinach, and cook 2-3 minutes or until spinach wilts. Add cooked pasta to spinach mixture, toss to coat. Then add 1 cup shredded part skim mozzarella cheese and 1/4 cup shredded parmesan cheese.

I work 4 days a week, so we have to make quick, easy meals (I'd rather spend my evening playing with my kid than cooking!). I am also on weight watchers (down 11 lbs in 5 weeks!) so we pay close attention to nutritional info and serving sizes.

One of our recent favorites:

Easy Southwestern Stroganoff

1 pound (extra lean) ground beef
1 cup water
1 jar (16 ounces) thick-and-chunky salsa
2 cups uncooked wagon wheel pasta (4 ounces)
1/2 teaspoon salt
1/2 cup sour cream

Cook beef in 10-inch skillet over medium-high heat about 6 minutes, stirring occasionally, until brown; drain.

Stir in water, salsa, pasta and salt. Heat to boiling; reduce heat to low. Cover and simmer about 15 minutes, stirring occasionally, until pasta is tender. Stir in sour cream; cook just until hot.

Makes 4 servings, about 1 1/4 cups each

Easy Slow Cooker Chicken

* 4 skinless, boneless chicken breast halves
* 1 (10.75 ounce) can condensed cream of chicken soup
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 cup white rice

Directions

1. Cut chicken breasts into large chunks.
2. Place the chicken breasts, cream of chicken soup, cream of mushroom soup and the rice in a slow cooker. Cook on high for 3 hours or low for 4 hours.

NO SUGAR ICE "CREAM" -

take frozen hard blueberries - put a half cup to a cup into a cereal bowl, cover with very very cold milk - 2% or whole works best - but you can use 1% or even skim.

let it sit for about 15 to 30 seconds - the milk will start to freeze around the berries, gently fold the berries and the milk - the berries will defrost a bit and the milk will freeze - and - Bam! you have blueberry ice "cream". No sugar will be needed - and as a bonus the milk will turn lavender!

Kids love this - it is as much fun to make as to eat.

you can use other small frozen berries and even frozen strawberies but you will have to cut strawberries up and refreeze them before using them. Whole strawberries just are a bit to big to work as well as smaller berries.

There are several Web sites out there that are wonderful. Trying checking out Eating Light magazine - it's my favorite! There are a few other things you can do to bring down fat, sodium and calories on recipes you already have. For example, when baking cakes, cupcakes, muffins substitute unsweetened applesauce for the oil it gives everything a wonderful flavor and moist texture; for lasagna, use cottage cheese instead of ricotta and use mozzarella or monterey jack cheese; use eggbeaters or egg whites instead of regular eggs; try cutting cheese out ofyour diet - it's hard trust me but it's amazing how much better you will feel!

I made pork chops last night that turned out quite well.

Marinate pork chops in sauce for about 30 minutes (I used Kikkoman Sesame Ginger, but find something you like).

Crush some stuffing mix.
Dip marinated pork chops into stuffing mix to form a breading (can dip in egg first if needed).
Brown both sides of pork chop (in a little olive oil).
After browning, add 1/2 cup - 1 cup of water to the pan and cover, simmer on med-low heat for about 20 minutes. (pork chops do not need to be covered in water, just make sure there's enough on the bottom of the pan to keep chops moist - you can add more later if it burns off). (optional -add a tablespoon or so of the sauce to the water as well).

Serve with your favorite veggie and some apple slices.

I didn't do this, but you could add pineapple chunks and sliced green pepper to the pot for the last 20 minutes of cooking.
