Healthy Cake Recipes for Baby's 1St Birthday!

My baby's first birthday party is coming up this Saturday, and I'm looking for a healthy (but still yummy!) recipe for a small cake for her to eat (OK, so most of it will probably end up on her face, but she'll still eat a little of it, I'm sure!) I'm ordering a sheet cake from Harris Teeter for the grownups, but I was wanting to make the little cake for my daughter myself, so I can control what goes into it. I've managed to keep her away from all the super-sugary processed foods until now, and I don't see why she should ingest a ton of sugar just because she's one! I've seen healthy cake recipes posted on this site before, but I can't seem to find those postings, so mamas, please send me your best yummy recipes!

You could make a carrot cake. Those are usually healthier. I am an excericise health nut but even I eat cake on my birthday. It sounds like you are a skilled baker. I would make something fantastic!!!

Do you have a copy of the "What to expect the first year book?" There is a tasty and healthy recipe for pumpkin muffins in the back of the book. I've discovered that little ones can handle muffins and cupcakes much easier than a piece of cake. Happy baking!

Congrats on your daughters big day! Here's a very simple recipe you can use. Tear up angel food cake into small chunks and get some fresh strawberries and slice them. If you have one of those small bundt pans that would work great. Mix berries with some chunks of cake and press into the pan. Then freeze. once frozen, turn out on a plate and top it with some strawberry yogert. Let it soften just a bit before you give it to her, but not so much that it falls apart. Have fun!

I modify the Carrot cake recipe in "Joy of cooking".

It is an oil based cake, so it is always moist, it is dairy free (if that is a concern) you can add flax meal, substitute 1/2 the white flour for whole wheat. Add nuts & raisins if that's your thing. I cut the sugar, too - by up to half.

Then you don't have to feel the least bit guilty about the cream cheese & butter icing! (ha ha)

I have made this cake countless times & always get rave reviews!

A friend of mine took strawberry cream cheese and mixed plain whipping cream in, formed it into a cake and put some more whipping cream on top withsome fruit and he loved it! That is only if your child is not allergic to dairy. You could modify a cake recipe by using whole wheat pastery flour, coconut oil, agave syrup and so forth. Or search for vegan or raw food cakes. There are plenty out there! Good luck and have fun!

If you are good at improvising here is a link to an example I found on the web researching for my son's 1st birthday coming soon. I thought it sounded crazy, but then saw the picture. A beautiful little cake, but it is bread with mozzarella and cream cheese frosting!

Believe it or not, I did almost exactly what Terrie did. Angel Food Cake with Strawberries and Whipped Cream so that I could control the sugar. He loved it! You guys have fun on this wonderful day.

I found some recipes for cakes that called for soy flour and some were egg-free. They still had a little sugar added, but really I think just stay away from cakes with eggs or honey added. I got so frustrated with trying to make the perfect cake that I ended up just getting my little guy a clown cone from Baskin Robbins. He didn't like the icing cause it was too sweet and didn't like the ice cream cause it was too cold, all he ate was the cone!
