Have MANY Soccer Nights Now, Help!!!

My hubby and I have to playing soccer this year, and were blessed to have 1 get mon and wed, and the other get tues and thurs. Gotta love the sat game day!! I need some quick, HEALTHY recipes, to help me make it through this season. I like to cook, alot, so anything thats a good make ahead and reheat, is cool too!!

Check out Betty crocker.com and look up cheesey enchiladas.

Also, mannicotti is easy to freeze and use when needed (On the back of a mannicotti past box).

Also, a dish of baked ziti freezes well and can be used whenever.

ok, one is tatortot casserole that i got from my church, very easy,cheip, and filling! fry up a lb-2lbs of hamburger(depends on family size)drain and mix with a can of cream of celery soup, spread in the bottom of 9x13, put layer of cheese on top of that(can use slice or shredded, i prefer sliced)then arrange tatortots on the top and bake @ 375 for about 20-30 mins or until tatortots look done! The other one doesnt have a name, i made it up myself!lol ok, take a package of chicken breasts or tenders, clean and cut up and put into bottom of 9x13(spray pan so nothing sticks first), then i like to season chicken. In a big mixing bowl take family size cream of chicken soup, 2 bags of lipton chicken brocoli noodles, i cup of ranch dressing, and enough milk to make it really soupy(sorry, cook alot and just dont ever measure!lol) Pour combo over the chicken,cover and bake for about 30 mins @ 375, take out, cover with shredded cheese and leave cover off and bake for another 10-15 mins. This is something that you could do in the morning,put in the fridge, then pop into the oven when you got home! Hope you enjoy! L.

Hi, C.! I know your pain only for me it was football nights! One of my boys' favorite recipes is a 1 pan dish (I use my electric frying pan)that is quick easy and a balanced meal. Take polish or smoked sausage and brown it with just a bit of water. Take canned green beans and canned sliced white potatoes (both drained well) and sauerkraut (do not drain) and put them all in the pan with the sausage. Cover and simmer until hot. Even if your kids don't like sauerkraut the juice from it gives everything a wonderful flavor. Cooking time? About 30 minutes.

I also fell in love with my crock pot all over again during football season....

Hey...my advice to you is CROCKPOT. I am a new mother to a four month old now and he takes up a lot of my time. My husband goes to work at 3:00am and comes home around 7:00pm, so it's all me and the baby. I love crockpot recipes because of the fact that when he takes him morning nap, I can prepare it and then let it set for hours. when my husband gets home all I have to do is get the plates out and serve it. It makes great for leftovers for him to take to work. If you want some great crockpot recipes I have some or you can try out Sandra Lee Semihomemade crockpot recipes. Its a great book. I swear by it. Here's a few,

Steak- use chipolti gormayo and smoother the steaks. Leave them in the fridge while prepping the other things.

Corn on cob, grill. Cut up ciliantro, 3 scallions and 1 tablespoon of lime juice, salt, pepper and a little olive oil. Slice the corn off the cob into the mixture.

Grill steak, you can make a salad and get some rolls and you are done.

Okay carb fun, this is simple, get the bag pasta from bertoli. They are usually yummy. Salad and veggie and rolls.

Oh if you don't want steak, you can do it with pork or chicken. Either way it's good.

You are so lucky to get to play. I used to play and actually dream about it now. (I am pregnant, so all I can do is kick the ball around in the back yard) Enjoy! Jen

Try doing breakfast for dinner some nights. Omlets, skillet potatoes, cut up fresh fruit.
If you shop at places like Sam's Club, buy the giant package of ground meat. When you get home, instead of immediately portioning it and freezing, go ahead and brown it while you're putting your other things away. Most recipes that use ground meat have you brown it first anyway. You'll save time. After you have it browned, then put it away in portioned bags. Pull it out for tacos, spaghetti, soup, etc.
Fish is quick and easy. Steam some veggies alongside and toss in a couple rolls or potatoes or rice side.
The key is to have your main course taken out of the freezer and ready to be cooked by the time you get home.
Buy the rotisserie chicken that's already cooked at the grocery store. They taste great and if you have some left over you can use it for other things like chicken nachos. Or chicken salad.
Pita pizzas are quick and easy as well. Pizza is the most versatile food because you can literally put anything on it and it usually comes out fantastic.
I've got some recipes that are made in the microwave in 30 minutes or less. I wasn't a real fan of microwave cooking, but these particular ones turned out great. And microwave cooking takes less energy and time than stove or oven cooking so you're helping the environment. :o) Let me know if you want the recipes.

Crock Pot! It can be your best friend. I put together a meal at night in the crock and put it in the fridge. Then the next morning I plug it in, set the tie and heat and just let it cook. When the cook time is done it automatically keeps it warm. Whenever it is time to eat the food is ready and you have a whole meal in one pot.

For example: I simply get a roast, carrots, celery and potatos. Chop them up and add seasoning (whatever you like) and let it go. Veggies, protein and carb. One pot. I love it. You can do this with chicken, pork, beef, just about anything. I like the fact that even if we eat at totally different times the food is ready. My husband works the midnight shift and when he works OT I start the crock at night and then the dinner is ready when he gets home in the morning and he can eat. Then I can refridgerate and eat whenever. There are some great crock pot recipes online.

Oh yeah I forgot another favorite. Take green beans, canned whole potatos and smoked sausage. Chop the sausage into bite size pieces, put them all into a crock pot, stove top or oven pan and let it cook. Season with salt, pepper, and lots of garlic powder. It is awesome and the guys are my hubbys work are always asking me to make it!
