Freezer Recipes??? That You KNOW Are GOOD!

Hello Moms,

I am looking for some tried and true recipes that YOU have actually had. I need to get some meals frozen and the only things I make that I know freeze well are lasagna, pizza hotdish, and taco soup.....

Do you have any others I can make? I'd appreciate any help. I am only looking for recipes that you've actually tried and are good.

There is a crock pot beef stew I make and freeze for my husbands lunches and it works well. Plus it makes two meals which is nice...

MEAL 1 (to eat now)
First make a roast with extra cut up potatoes, carrots, and onions.
For the broth use:
about 1/3 c red cooking wine
7-8 beef bullion cubes
water to cover
1.5 - 2 T of Worcestershire sauce
2- 3 T minced garlic

Put everything in crock pot and slow cook for 4-6 hours depending on the size of the roast and your crock pot.

Remove meat and some veggies and eat this meal for dinner that night. (Left over meat makes good philly cheese sandwiches if you get a big enough roast.)

Leave the cooker on low.

MEAL 2 (to freeze)
After dinner:
Add to crock pot with broth and veggies:
1 lb browned hamburger
2 bay leaves
2 tsp marjoram
1 can diced tomatoes

Cook for 2 hours on med heat. Then cool and freeze the soup for other meals.

This is one way that I can throw things together and not have to do much but still end up with 2-3 really good meals and one of them is for on a day when I don't want to cook. And my family loves these meals.

my family loooooooves the chicken enchiladas that i make. i seriously don't have much of a recipe, u can throw in just about whatever sounds good in mexican food, i also just eyeball the amounts of ingredients, theres no science. but heres the basic idea.

soft taco shells
2-3 large cans enchilada sauce
2-3 baked chicken breasts
1-2 large cans refried beans
mont.jack cheese
cheddar cheese
peppers,onions, whatever else is all optional

create a mixture of the chicken, ench.sauce, beans,some of the cheese, and peppers and onions. the mixture should be soft but thick. then i use some sauce to put on the bottom of a pan so they come out easy outta the oven. fill the shells and roll them tight in the pan. go over them with more sauce and more of the cheese. they freeze really well then into the oven for half hour or so on 375.
i always make lots of em to freeze so thats why i just keep adding in whatever i want and don't really know amounts of anything. hope its helpful and u enjoy sometime!

homemade ravioli works nice it takes some a while to prepare but it does work.
2 eggs,2 c flour, 1 tbsp oil and a dash of salt to make pasta dough roll it very thin i make 2 thin sheets then cut out circles with a biscuit cutter.

for the filling you can use whatever you want hamburger, cheese, veggies i use a cauliflower spinach paste (i head cauli steamed to fork tender then blend in blender until puree with cooked spinich dash garlic powder dash crushed red pepper and 1/2 block of fat free cream cheese)any left over can be used as pizza sauce pasta sauce of dipping sauce

then you put a spoonful in center of one circle top it with another pasta circle and crimp the edges with a fork put in a freezer bag then take out when needed and dump into a pot of boiling water it should cook pretty fast they will float to the top when they are done shouldnt be more then 10 mins then you take them out add some pasta sauce and there is your dinner. even my 13 month old likes this

Chicken Devan -- freezes well and the kids LOVE it!!!

3 boneless, skinless chicken breasts
1 package frozen broccoli(or fresh)
1 small can cream of chicken soup
1/2 cup mayonaisse
1/2 tsp. lemon juice
1/2 cup shredded cheddar(I use sharp)
1/4 cup PLAIN breadcrumbs
2 Tbls. melted butter

Steam broccoli until almost done (broccoli will cook more in the oven later on).

Cut up chicken in bite sized pieces and boil or steam until fully cooked.

In a bowl, mix soup, mayo, and lemon juice.

Spoon a little sauce (soup mixture) into the bottom of a baking pan.

Layer on broccoli, then chicken, then rest of sauce. Sprinkle with cheese.

Mix butter and breadcrumbs and sprinkle over top.

Bake 25 minutes at 350 degrees F.

This may be made ahead of time and refrigerated; adjust length of baking time to allow it to heat through.
