Favorite Camping Food?
My daughter and I are going to a camping family reunion tomorrow for two nights. I still have not grocery shopped, and am coming up completely blank about ideas for food to bring along. We're all bringing our own meals, except for Sunday noon which is potluck. I have the use of my sister's RV stove, so could do some cooking, but would like to keep that to a minimum. Ideas?

My fave is a cold mediterranean tuna salad with some hearty bread or crackers. Instead of mayo, use olive oil and red wine vinegar. Mix in artichoke hearts, sun dried tomatoes, tuna, kalamata olives, red onion, cilantro (or parsley) and capers. It stays in the ice chest and can be brought out to snack on with crackers or put on a sandwich. If kids are iffy on the tuna, make up a batch of regular tuna salad for them. Great protein to keep you energetic while camping and light for beating the Summer heat!

My college boyfriend and I would make steak kebabs beforehand and hike them in our backpacks and then put them on this little rack that folded over a fire. Yummmm! Just cubes of steak and quartered onions and peppers and tomatoes. Then wrap potatoes (pierced with a fork) in aluminum foil to put in the coals for about 45 minutes. You can prepare it all in advance. Instant oatmeal for breakfast or Bisquick with just water and blueberries for quick pancakes in the morning. We went to school in the south, so instant grits with grated cheese with a over-easy egg on top was also one of our favorite breakfasts.

Corn beef hash with eggs sunny side up on top, all in a skillet, brown the hash, flip it, put the eggs on top and let it cook the the whites.
REALLY good breakfast, we make occasionally even when we aren't camping.
Breakfast burritos is another good one.
And, of course, s'mores :)

I like primitive camping (tent/sleeping bag), so I take stuff that doesn't have to be kept cold - jerky, granola/cereal bars, fruit, canned beans, bread/crackers, peanut butter

Steak and baked potatoes. Start a fire, coat potatoes with oil, cover with aluminum foil, and place in the coals. Cook extra potatoes for hashbrowns in the morning.

Sandwich wraps:
Deli ham and thin sliced cheese(pack in a cooler)
package of tortillas
container Philly veggie cream cheese spread (keep in cooler)
plastic knives
Spread the philly on a tortilla, lay a slice of ham (or 2) a slice of cheese and roll it up. Yum! And no mess.
For the potluck, why not take an extra cooler full of ice with a seedless watermelon. Just rinse the outside of it and slice into quarters for the reunion. Set the quarters into those big foil serving trays with ice from the cooler all around, and stick a big knife in one quarter. Everyone can slice off their own "quarter round" slice and eat it like pizza. ;)
