C., You can use ground flax seed to replace eggs in most baking recipes.
For each egg needed, place in blender:
1 heaping tablespoon of whole organic flax seed, blend until it becomes a fine meal. Add 1/4 cup cold water blend 2-3 minutes until thickened and has the consistency of eggs. Each 1/4 cup of Flax seed mixture will replace one egg in baking.

They are very yummy. The little girl I made them for loved them (so did her parents), and my son actually requested them- he's not really much of a pumpkin fan! I found it by googling egg free cookie recipies.

My daughter is allergic too. Applesauce is a great substitute for eggs in cookies. Look online for more specifics, but I use one of those snack size applesauce containers in place of two eggs. Look online to verify that quantity. Also, a great substitute for eggs in cake is one can of diet soda. Just mix one box of cake mix and one can of diet soda. That's it--no oil, water or anything else. Use darker sodas (Diet Coke) for dark colored cakes and Diet Sprite for white or yellow cakes. It works great, and it's egg-free! I hope that helps!

yummly.com is a great site for recipes as it allows you to select what allergy you have to eliminate it from recipe. My kiddos have/had dairy/dairy derivatives, eggs & peanuts, nuts. Divvies also has a great allergy friendly cookbook.

any recipe you have you can replace the egg with ...........equal parts ground flax seed and water, vegan mayo, cornstarch and water, or my personal favorite greek yogurt.
or if you can still use the whites you dont need the yolk.
