Egg Casserole Recipe

I need to make an egg casserole for Easter brunch. First- do you have any tried and true recipes that you love? And second, it seems like whenever I bake eggs, they take so long to set that the outside is rubbery and the inside hardly done. What am I doing wrong? Thanks!!

too much milk/liquid in with the eggs. Remember that the meat will produce some liquid as it cooks, and anything frozen will add some water. I cut milk out of mine altogether.

9 eggs
1lb sausage and/or bacon
1 16oz package hash browns
I can gravy

layer like lasagna. Basically, add whatever you want, just with enough to make a whole layer.

i'd have to look it up, but main thing is to make the ingredients the night before in the pan and store in the fridge. Next morning put the whole thing in oven...i think 350 for 45 min.

our favorite egg casserole is the following
oven at 350
large casserole dish or cake pan spray with pam

8 slices of white bread cubed and sat aside in large mixing bowl
chop up 1 green pepper, 1 onion and a cup of mushrooms
2 cups of cheddar
1 dozen eggs
1 lb of pork sausage cooked and drained

in a large bowl beat the eggs like you would do for scrambled eggs pour over bread slices and mix up add in the veggies and sausage and half the cheese mix well pour into casserole dish or cake pan. cook til eggs in middle are done. it is really yummy. you can use whatever veggies you like or skip them altogether. add the rest of the cheese when the egg dish is almost done so sprinkle it over the casserole and slide back in oven for a few more minutes to melt. and make more or less eggs as needed.

Try doing quiches instead. Use a Pillsbury pre-made pie crust and go from there. Put a top crust on it too keep in more moisture.

Bacon and spinach are amazing. But plain old mushroom are great too. You can get 1000s of quiche recipes online.

I don't like to use a bread base with mine - more empty calories. I used this recipe: http://allrecipes.com/recipe/baked-omelet-squares/detail....

For ingredients to mix into the eggs I used onions, jalepenos, sauteed onions and mushrooms, ham, and cheddar cheese. It really works with whatever you want to put in it.

My mom makes a great one (sorry, I don't have the recipe) that is similar to the one Sherry posted below, but instead of using cubed bread, she uses croutons. It's nice because they don't get soggy. It's really delicious!

Serve it with some salsa on the side. That will help if it happens to come out too dry. It's also just super tasty that way - IMO. ;)

Also, I think sometimes it may look like it's not done inside, but it will set as it cools (I have a dinner egg casserole dish that does this - and it has a lot of milk). It seems runny, but after it cools for a few minutes it's perfect.

First tip IS Not to Raise the temperature, as the edges will bake/cook much faster than before the center has a chance to catch up.

I grease a casserole dish. Then I put down a layer of frozen diced hash browns, diced ham, chopped onion and shredded cheese. I beat eggs with a little bit of milk, then pur the mixture over top. I bake for about 30 minutes at 350. I also like any of the Bisquick recipes for Impossible Egg Pie.

My favorite has been:

Spray glass baking dish w/ pam
Lay slices of sour dough or potatoe bread on the bottom
Beat twelve eggs and add cubed ham or crumbled bacon and 2 cups shredded cheddar. Pour mixture over the bread.
Cover and refridgerate over night
The next day bake at 350 for 30 minutes, then sprinkle cheddar over top and bake an additional 15 minutes.

You can tweak this recipe by adding sauteed peppers, onion, or broccoli
