Edible: Fairy Fudge Left on Counter?

My daughter made fairy fudge yesterday, and this morning wanted to cut it out. It has raw milk in it, and she left it on the counter for about 2 hours. Safe to eat? Or is she learning an important cooking lesson with me throwing it out?

It has the milk, powdered sugar, marshmallows, butter and vanilla.

What can I do next?

I always keep fudge at room temperature. I am not familiar with fairy fudge, but when I make fudge I cook the ingredients, and all that sugar is a preservative.

Sugar slows down the spoilage of milk. This is why butter cream frosting can remain unrefrigerated for up to three days. ( I have a side business cake decorating) Two hours is fine.

It's fine. Sugar is an exceptional preservative.

Doesn't the milk, sugar, etc get all cooked together for a while on the stove? Also, fudge is not usually refrigerated in the store, right? So I'm inclined to think it is probably safe.

I love Suz's suggestion... try a bit yourself and see how you feel. Quality control, right?

love that you're using raw milk! i have to drive an hour to get it, so don't get to have it as often as i'd like, but oh how i do love it.
ETA oh, pity. bet it would be DELISH with real raw!
i don't think 2 hours is a problem. if she'd left it out overnight i'd probably pitch it. this is a recipe where the milk gets heated, right?
if this were me, i'd try a bite myself. if i was feeling fine an hour later, it would be open season.

Only 2 hours? I seriously doubt it's spoiled yet. But please let her know you would prefer she refrigerate it from now on even though I have never refrigerated fudge.

The milk is cooked when you use it to melt the marshmallows and butter so it's ok to leave it out for a while. It's a cute project. Your daughter must be very proud of herself and her fairy fudge.

J.,

Fudge can be left unrefrigerated for 48 to 72 hours. Heck probably longer than that - my mom would make fudge and mail it to me when I lived in Belgium and Germany - and it was still DELISH!!!

So I would eat.

I think it would be safe. But would you really want to eat it?
