Hi y'all! Need some quick/easy yummy recipes for my picky 2 and 4 year old- they will eat chicken but I feel like all I do is make chicken which is fine but looking for some more recipes. :)) thanks!!!

i have a ton of chicken recipes but now that i think of it none of them are really healthy- but all definaltley kid friendly because im a picky eater myself & im all about making things that are easy/relatively quick.. my favorite is chicken casserole- (feeds 6people) 3lbs cooked chicken cut in bite siize pieces, layerd in the bottom of a casserole dish (its a big one but im not exactly sure of the size- the chicken covers the bottom of the dish with no empty spaces) then 2 12oz bags of broccoli (the one that comes in the microwave steam bag-cook it in the micro 1st) layer it on top of the chicken.. in a bowl mix 1 cup of milk with 1 can of cream of chicken soup (theres alternatives to the soup but im not sure of the recipes- i know the "cream of" soups arent exactly good for you) & 2 tbsp lemon juice, pour the mixture over the chicken& broccoli, 1bag (not sure of the size but it says 2cups on it) shredded cheddar cheese sprinkled over the top.. then in a bowl mix half a bag of cornbread stuffing mix with 1- 1 1/2 sticks of melted butter (i tend to over-do it with the stuffing mix since its my fav. part so always end up needing the xtra 1/2stick of butter).. sprinkle stuffing mixture over the top ,, bake at 350 for 30-35 minutes (till stuffing mix is crunchy/golden brown.. you can also substitue regular stuffing for the cornbread/melted butter mixture

ive made chicken teryaki stir fry before, but the way we eat in my house i have to make a ton of it... cut up chicken in bite size pieces, (i marinate it in teryaki ahead of time but its not necessary) and cook.. then use the veggies of your choice (i use bell peppers, broccoli and baby corn) cook veggies in a pan/wok in teryaki sauce until tender,, add the chicken and a little more teryaki and let simmer for a few minutes &serve with rice

we also like shishkabobs.. if you marinate them long enough (in anything youd like) the veggies dont taste like veggies, just the marinade we do chicken, mushrooms, red&green peppers and onions

i also make scalloped potatoes (i buy them in the box u just have to putem in a pan and mix em with milk and butter) cover top of chicken breasts in panko bread crumbs and place them in a baking pan, fill the pan around the chicken with the scalloped potatoes and bake

then theres the old stand by -marinate chicken breasts in lots of italian dressing, let them sit in the fridge for at least an hour in the dressing.. cook em in a pan on the stove and serve with rice&veggies (i do the microwave rice &veggies-saves a ton of time)

this last one is so0o not healthy but i loveit.. cut up and cook chicken in a pan on the stove (bite size pieces) boil cheese tortellinii to al dente (or any pasta youd like) combine chicken and pasta in a pot on the stove and add alfredoo sauce ( i buy 2jars of the fat free alfredo- 3 small bags of tortellini and aproxx 2lbs chicken- i have 4 people to feed, 2 of whom eat enough for 4 people) simmer until sauce is hot & serve

My toddler loves chicken cheesy broccoli rice casserole...which is just what is sounds like. Rice, cream of whatever soup (we make our own because we need gf but you can use a can...mushroom is best), cheese, broccoli, and chicken. We cook the chicken separately and shred and add it to the casserole at the end. Yum!

My kids are very picky. They do not like their food mixed together, no do they like any sort of sauces. It actually makes preparing meals for them much easier, and they eat healthier. They like roasted meat. Ham, beef, chicken, turkey and pork. They also like baked fish, boiled shrimp and crab. They like simple seasoning or marinades. They like potatoes (mashed, baked, roasted, boiled), plain rice and buttered noodles. They like their veggies raw (one will only eat brocolli, cauliflower and carrots).

BTW: Homemade Mac & Cheese made from scratch with lite cheeses (munster, alpine lace,mozerella etc ) and blueberries can add a bit of healthful flavors to your table and children's bellies.
