We made a huge batch of taco meat this past weekend. Tonight, my husband took a big portion of it and dumped it into a pot of mac 'n cheese. It was soooo good! Yum.
(Don't worry, we topped it with veggies...gotta be healthy and all that!)

Hungry Jack Casserole... a favorite when my kids were little!
Brown 1 lb ground beef, add some chopped onion (or the dried minced onion.. very easy!), chopped green pepper.
When the ground beef is browned, add 3/4 c barbecue sauce, 2 tbsp brown sugar, 1 can pork and beans, and heat a bit longer.
Pour into a greased casserole, and top with 1 tube canned biscuits cut in half, and placed on the beef mixture cut side down, in the shape of a circle.
Top with 1 c shredded cheddar cheese.
Bake at 375 degrees 20 minutes
Yummy, and quick and easy!
Here is a link to the recipe... I just used the cheap smaller basic biscuits...

I make a taco-like casserole that's pretty yummy...
Make 1 box jiffy corn bread according to directions and spread in the bottom of a greased 11X17 (or close to it) baking dish.
Brown ground beef then mix with taco seasoning, 1 jar of salsa and I can of black or kidney beans.
Spread beef mixture over corn bread, sprinkle with cheese and bake for about 30 minutes. Top with sour cream if desired!

I know its too late for dinner but google "tater tot casserole". Its super easy, super good and you don't even have to cook the hamburger! You just put it all in a baking dish and cook. Maybe you can do it next time! =)

Taco soup is really really good, and ridiculously easy. (brown a pound of meat with onion, drain, put in a pot with 1 can of ranch style beans, 1 can of chopped tomatoes, 1 can of rotels, 1 can of corn, a packet of taco seasoning, a packet of ranch seasoning (the dry salad dressing mixes--can use the dip or the dressing packet), stir it up and heat through, and serve with shredded cheese and corn chips)
Spaghetti and meatballs (allrecipes.com, type in meatball, and click sort by rating--the one by "bigguy" is the best, and easy)
Chili (if you can find the Tobasco chili in a jar, then after browning the meat with onion and draining, pour the chili sauce, a can of rotel chili fixin's, 1/2 a beer, and a can of beans to it if you want it good, fast, easy).
Burgers: I'll do different versions of hamburgers to keep it interesting. I think I found "firecracker burgers" off allrecipes.com (curry and a special mayo with yogurt....sounds gross but really good), Taco burgers: I will do taco seasoning, diced jalepenos, and a little shredded cheese in the meat...serve with wholly guacamole or sliced avocado and tomatoes. You could do lipton onion soup mix or ranch seasoning instead, kinda anything.
Meatloaf is something, but we're not big on meatloaf. However, we love mexican meatloaf, even the kids. (2lbs beef, a splash of worchester sauce, some chopped onion, taco seasoning, some rotels, some cheese, an egg, and instead of bread crumbs use the corn chips and put them in a big ziploc bag and smush them into little crumbs with the rolling pin, mix it all together and put it in a dish in the loaf shape, bake however long you're "supposed" to do normal meatloaf (I can't remember offhand)...then pull the meat out, top with some salsa and shredded cheese and put in another 10 minutes, til the cheese is all melted). We serve that with either fiesta corn or mashed potatoes, and some peas or green beans.
Tacos or burritos---you can't go wrong there, and serve with some refried beans, mexican rice or spanish rice, and a little simple salad to make it a "meal". Buying some jarritos (Mexican sodas in glass bottles) and throwing in some simple bean, cheese, and pepper nachos makes it festive at our house.
A box of Zatarains dirty rice with a pound of beef (I do like to add drained rotels to that but not necessary) is cheap and fast, but tastes good.
One day I accidentally made SOS when I'd cooked some meat, threw in some cream of mushroom soup, the leftover steamfesh mixed vegetables I had in the fridge, etc. I can't really remember what else I did there, but that was the idea. That was kind of funny....The boys ate it on toast with potatoes on the side, we ate ours over mashed potatoes. Sometimes things like that happen when you're trying to clear out the fridge, and it was surprisingly good.
Stuffed bellpeppers are good too, or even just the "stuff" for it, and then chop up the peppers and serve it like that (easier for kids to eat that way).
You could make patties with them, mixed with lipton soup mix (onion, beefy onion, mushroom, whatever you want) and then fry them up, serve them with mushroom gravy, rice or mashed potatoes, and a vegetable.

Sloppy joes-- and then used the leftover sloppy joes for homemade pizza another night (I use a home made whole wheat crust, but you can buy pizza crust or use a mix, the sloppy joes and cheddar or co-jack)

I made my own shepard's pie and it was a huge hit and so easy! Here is what I did:
1 pound of ground beef
1 packet gravy
1 packet instant potatoes
1 small can mushrooms (optional)
1 frozen pre-made pie crust
I baked the pie crust for 12 minutes. I browned the beef in a pan. Cooked the potatoes and gravy according to packet directions on both. Pour the gravy over the ground beef and mushrooms. Remove the pie crust from the oven. Pour the ground beef mixture into crust, then smooth potatoes over the top of it. Voila! Dinner is served. I served a side of green beans and corn with it.
My whole family loved it. There are four of us and we ate the whole pie!
A.
