Easter Recipe Ideas

WIth the Easter Holiday upon us, I am looking for some new Easter Lunch ideas, My family and i usually have the traditional Easter Ham, but I want to do something different this year. Any suggestions? Thanks,

The state park where i live hosts an age appropriate easter egg hunt and families grab a picnic table and either bring a bbq or use the parks and we bbq.

Last year we had grilled ham steaks w/pineapple chipotle glaze, red skin potato salad, deviled eggs, green salad, rolls, chicken and veggie kabobs, mac salad, coconut cake, and various pies. There were three families together.

It was great!! Fresh air and sunshine. Dont know what the weather will be like this year but i plan to be untraditional and healthier.

If you like beef, how about a nice prime rib. You can bake it or do it on the stove top using a cast iron dutch oven. I do a prime rib sometimes with a nice twice baked potato and big garden salad. This is a big hit in my family.

I also have decided to do something different this year. Everytime I make this someone asks me how I made it.
Tomato Basil Pork Loin
3-5 lb. pork loin
3 tablespoons olive oil
minced garlic
chopped onion
sliced mushrooms
diced tomato's
basil
pepper meat
1 can chicken broth

put olive oil in large skillet
add garlic/ heat
brown meat on all 4 sides/ about 30 seconds each side
place in large baking dish
add everything else except for broth
brown about 3-4 minutes(turning to brown each side)
add broth bring to boil/ remove from heat
pour over meat/ cover with foil
Bake on 375 3-4 hours depending on size of Loin

Goes well with all dishes that your family already loves.
I promise you will not be disappointed. No knife is needed to cut the meat. It just falls apart.

I see you have gotten some great ideas, but I thought I'd add mine. We may have this dish at my house for Easter. A friend gave it to me, and its delicious and easy, as well as pretty! :)
Cranberry Chicken

1-16 oz. can whole berry cranberry sauce
1-8 oz. bottle creamy French dressing
1 envelope onion soup mix
6 chicken breasts

Mix cranberry sauce, dressing and soup mix. Pour over chicken breats in a 9x13 dish. Marinate overnight. Bake at 400 degrees for 40-60 minutes. (We eat ours over rice.) Enjoy!

Being from Calif. and leaving most of my family there. We often had rack of lamb for Easter time. If cooked right it's very good but at the same time if not it's very bad!

Actually, i am looking for the same thing. I just think it's time for a change on the holiday meals i just haven't got around to asking mamasource for help with ideas yet because i am trying to get help with stopping my 3 year old from sucking his thumb. Any suggestions? Please feel free to respond.

Maybe make egg-shaped ham sandwiches? Deviled eggs are good. Also, Hopping John (made with black-eyed peas) is really good. You can serve it with rice if you'd like. Or, if you've got the money to spend, spruce up a nice rack of lamb.

Try grilling out. Steaks are great and just enjoy the nice weather.
