Easter Brunch Ideas Please

Hello Ladies,
Our plans have changed and now instead of a late lunch/early supper for Easter we're going to do a brunch. It's been so long since I've done one and I'm kind of at a loss in this moment. Of course the regular kinds of things go flyin' through my head, fruit, eggs, bagels, etc. But what can I make that is special? Does anyone know of any yummy casseroles? I haven't made a breakfast one before.

We're having nine adults and five children

So What Happened?

WOW -- Thank You All so much. Now I don't feel so freaked out. This will be different and interesting to do as I'm not usually into making a lot of these kinds of foods for a big group. Such good ideas I'm not sure which ones, but I think I'm going to have a variety of your ideas. Thanks again everyone.

Easy quiche (w/biscuit mix, ham, spinach or broccoli, cheese)

Orange juice

bagels w/different cream cheese spreads

mimosas

recipe: 2 cups milk, 4 eggs, 3/4 cup biscuit mix, 1/4 cup softened butter, 1/4 cup grated parm cheee, 10 oz chopped broccoli, 1 cup cooked ham, 8oz shredded cheddar. Mix together, put in greased pie plate dish, cook in 375 degrees oven for 50 mins (top slightly browned).

For sure a quiche. Maybe bacon, spinach and cheese? Or you can do ham and egg cups (easy). Check out ourbestbites.com, Basically you just mix eggs, veggies and cheese and then pour them into muffin cups lined with ham. They are like little individual quiches without crust and are very good.

Actually, I made the most delicious appetizer the other day that was very easy and fast: prosciutto wrapped asparagus. I did smear a small bit of cream cheese on the prosciutto before wrapping it around each asparagus spear. Bake at 450 10 min. Soooo good.

Do you have a juicer? It might be nice to have fresh juice to go with brunch. That would make it special.

you know for a brunch, you can still have full breakfast items....a crockpot of sausage gravy, a baked ham, hash brown casserole....all of these work well for brunch!

round it out with a vegie casserole, some fruit/salad, & dessert!

I found out today that the Family Meal will be at our house. It will be a big breakfast. Mom & I are taking 3 of her grandkids to Silver Dollar City on Saturday, they're all spending the night & then heading back home after our Family Breakfast. Hmmm, still working on my menu! But looking forward to it!

Brunch is my Favorite! And so easy! Spiral Sliced ham, hashbrown casserole, and some fresh fruit. Oh, and mimossas! Voila!

Brunch is easy. Two quiches...one bacon, cheese, onion, the other one spinach and cheese. Mini muffins, tiny danish, bagels and cream cheese, plenty of fruit. Plenty of coffee and some yummy creamer options, apple and orange juices.

Definitely do the Creme brûlée French toast!
Make casserole the night before (thats recommended!) then bake it & serve next day.
SO easy and super yummy!

I love the crockpot breakfast. The night before I cook up a pound of bacon and a pound of sausage. I then layer frozen hash browns, meat, onions, and cheese in the crockpot. Once I have finished my layers I crack about 18 eggs, beat them and poor them on top. I put the crockpot on the lowest setting and go to bed. In the morning it is all done.

Hi C.-

Google 'creme brulee french toast...(food network maybe?) and YUM...

You set it up the night before...let that bread soak...throw it in the oven...and YUM!

Fruit salad to go with is nice...and maybe some bacon or sausage.

Some mimosas (with or without champagne) are festive....

And then...for the non 'breakfast' folks....some sweet rolls?

Ham and cheese oven baked frittata. Put frozen diced hash browns, chopped onions, diced ham and cheddar cheese in a greased casserole dish. Beat eggs with a little milk and pour over top. Bake at 350 for about 30 minutes.

We always have hard boiled eggs, devilled eggs, cheese, hot cross buns, paska bread and fruit at church on Easter morning.

We love French toast casserole (probably very similar to the Creme Brulee French Toast) and strata. Both of these are things you put together the night before & bake in the morning. Yummy!
