Hello everybody,
I was wondering if anybody had any good recipes they would like to share. I am looking for dinner recipes and if you have a good chocolate chip cookie recipe or sugar cookies. Thanks for your help.

So What Happened?

Thank you to all of you who gave me recipes or links for recipes. I will be trying them out as soon as I get to the store. I have my list all made up and can't wait to try them.

None for the cookies handy, but here are some good ones for dinner.

Golden Mushroom Pork and Apples
Prep 10 mins (cook time can be 4-5 or 8-9 depending on cooking in slow cooker low or high)
Makes 8 servings

2 10 ¾ oz cans of Campbell’s Golden Mushroom Soup (I have used Cream of Mushroom too)
½ cup water
1 tbsp packed brown sugar
1 tbsp Worcestershire sauce
1 tsp dried thyme leaves
8 boneless prk chops ¾ inch thick (or pork loins)
4 large Granny Smith Apples
2 large sliced onions

Stir water, soup, brown sugar, Worcestershire sauce and thyme into a 3 ½ qt slow cooker. Add pork, apples and onions. Cover and cook on low for 8-9 hrs or on high for 4-5, or until pork is cooked through.

I serve over rice, but a risotto or couscous could be nice too

Italian Meatloaf

1 cup dry bread crumbs
1/4 cup milk
2 lb. ground beef
1 can (8 oz.) tomato sauce or ketchup, divided
3/4 cup finely chopped celery
1 envelope GOOD SEASONS Italian Salad Dressing & Recipe Mix
1 egg, lightly beaten
2 Tbsp. chopped fresh parsley
PREHEAT oven to 350°F. Mix bread crumbs and milk in large bowl. Add meat, half of the tomato sauce and the remaining ingredients; mix until well blended.
SHAPE meat mixture into oval loaf in shallow baking pan.
BAKE 1 hour. Spoon remaining tomato sauce over meatloaf. Bake an additional 20 minutes or until meatloaf is cooked through.

Tater Tot Casserole
1 ½- 2lbs ground beef
½ onion chopped (optional)
4 cups frozen mixed veggies
1 can cream of beef or mushroom soup
1 32 oz package of frozen potato rounds (I actually prefer tater tots to the thinner rounds)
1 ½ cups shredded cheese (this wasn’t in original recipe but I added per family request). I use cheddar or Colby Jack.

Preheat oven to 375 degrees. Spray 9x13 dish with non stick spray. Spread uncooked hamburger into bottom of pan. Sprinkle with diced onions. Next layer frozen veggies and cover with the soup, spreading over entire dish. Add shredded cheese if desired. Layer tater tots on top, again, covering entire dish. Bake at 375 for 1 hr or until hamburger is done. Check after 30 minutes. If tots getting too brown, cook at 350 degrees.

Herbed Roasted Potatoes

2 tbsp butter or margarine
1 tbsp chopped fresh parsley
½ tsp fresh grated lemon peel
½ tsp salt
1/8 tsp coarsely ground black pepper
1 ½ lbs small red potatoes, cut in half (or in quarters if you can’t find small ones)

Preheat oven to 450 degrees. In 3 qt saucepan, melt butter with parsley , lemon peel, salt and pepper over medium heat; add potatoes and toss well to coat.
Place potato mixture in center of 24 x18 sheet of heavy duty tin foil. Fold edges over and pinch to seal tightly.
Place package in jelly roll pan and bake until potatoes are tender when pierced with a knife (through the foil), about 30 minutes (can take longer I’ve found if the potatoes are larger)

ABSOLUTELY I do ...

I grew my baby girl on natural foods and ideology ... on goats milk from our 160 acres, goat cheese and yogurt. Then moved to the Twin Cities here and continued to make YOGURT at 5 quarts at a time weekly... she and I finished that off with no problem.

She is now an OB-GYN with a baby almost 3 yrs old. I have rediscovered YOGURT now years later and have found a much easier way to make it ... fool proof (99.9%) of the time ...

From Yogurt, we can make YOGURT CHEESE or YOCHEE ... replacing sour cream, cream cheese and mayo's ... from cooking to dressings.

This is a family favorite of ours - big or little...we all love it.

Pizza Hotdish

-Peel and cube potatoes - enough to cover the bottom of a cake pan.
-Brown 1 lb hamburger and sprinkle on top of potatoes
-Combine 1 can tomato soup with 1 can cheddar cheese soup and pour over hamburger and potatoes.
-Bake for 45 minutes at 350
-Remove from oven and top with layer of pepperoni slices
-top with 2 cups Mozz cheese
-Put back in oven for 10-15 more minutes, until cheese is melted - I usually broil for the last couple minutes to get the cheese brown.

(This one is my absolute favorite from childhood and still is my favorite now!):

Calvin's Sugar Cookies

2/3 c shortening
3/4 c sugar
1 tsp vanilla
1 egg
4 tsp milk
2 c flour
1 1/2 tsp baking powder
1/4 tsp salt

Cream shortening, sugar, vanilla. Add egg, beat until fluffy. Stir in milk. Sift dry ingredients together, then blend into creamed mixture. Divide dough in half. Chill in fridge 1+ hour. On floured surface, roll dough to 1/8 inch thickness. Cut into shapes w cookie cutters. Bake on greased cookie sheet at 375 6-8 mins. Cool slightly. remove from pan. Frost or eat plain.

(This one is from one of my friends):
TRADITIONAL SUGAR COOKIES

Cookie

1 1/8 Cup butter/shortening
1 1/2 Cup Sugar
3 eggs
1 1/2 tsp vanilla
3 3/4 Cup flour
1 1/2 tsp. baking powder
1 1/2 tsp. salt

1. Combine Crisco, sugar, eggs, vanilla - Beat Well
2. Add flour, baking powder and salt - Mix thoroughly
3. Chill dough 1 hour or overnight
4. Roll dough to 1/8" thick
5. Cut out
6. Bake at 400 degrees for 6 - 7 minutes
7. Frost

Frosting

1 lb box confectioners sugar, 1 tsp vanilla, 1/2 stick softened
butter, 1/2 and 1/2 creamer to desired consistency, tint with food
coloring if desired

One thing I have made that is good for a big family is this: You cut up potatoes and add veggies of your choice (I ususally use drained canned green beans, corn, cut up some carrots) add 2 cans cream of mushroom soup and i think a half a cup of milk all into a cake pan and stir. Then put 4 to 5 pork chops on to depending on the size and bake at 350 for about 45 to 50 min or untill pork chops are done. Really easy to make and to clean and it makes a lot of food. I put shedded cheese on top when its done for something extra.

I have a great meatloaf recipe, my sister shared it with me and since I started making it, my family fights over the last few slices.

2 parts hamburger (leaner the better)
1 part italian sausage
onion diced
cheese, grated
egg
stuffing mix
mix together
no seasonings needed, the italian sausage does it all
about 15 minutes before it is done sprinkle more cheese on the top of the loaf

cut and serve
