Hello Ladies...
I am looking for some healthy crock pot recipes. If anyone has any recipes that they can share I would love to check them out!! Thank you.

I pulled my crockpot out of hibernation recently and fell in love all over again. A favorite around here is pulled chicken...I get boneless skinless chicken breasts & 2 small bottles of barbecue sauce...put in chicken cover with barbecue and cook...at end shred it with 2 forks and add more sauce to taste and serve on a bun. The kids love it and it quick and sustaining.My son often eats this before football.

I like to put a boneless pork roast and a jar of Silverfloss sauerkraut in the crockpot and let it cook on low all day. The pork falls apart.

Hi K.,
I love the ease of making dinner in the crock pot!
I like to make pulled BBQ beef by putting a 2 lb. chuck roast in and pouring homemade BBQ sauce over it (ketchup, brown sugar, vinegar and the secret--apricot preserves). Cook on low all day & shred with two forks.
I also like to make stuffed peppers in my crock pot.

Better Homes & Gardens website has a whole section on crock pots (bhg.com) and also food network.com has a bunch too. I get a bunch from bhg, though. I do have some crock pot cookbooks at home...I'll have to look up the titles and add to my post. I love my crock pot...I don't use it enough. One of my favorites is to put ribs (beef or pork) in the pot (you may have to quarter them so they fit) and pour 2 bottles of your favorite BBQ sauce over them. let them cook all day and then make some sort of potato to go with them. Usually i make mashed and use some of the sauce as gravey :) so not good for you, but it's so yummy!

I'm with you...it's tough to find casserole and crock pot recipes that are HEALTHY!

I've pulled some of my faves that are healthy, and here they are. If you don't already have someone to provide you with the healthy ingredients/seasonings from Tastefully Simple, I can hook you up! Just email me! The jars of seasonings are very economical - they go a long way.

Corn, Black Bean Salsa Chicken
Take 3 lbs of frozen Chicken breasts and put in a slow cooker. Pour a jar of Corn, Black Bean Salsa on it. Add extra seasonings if you like. I like the Fiesta Party Dip Mix™
Pour 1/2 cup of water and cover. cook for 8-10 hours on low-med.
When ready to serve shred with 2 forks and stir. The chicken is flavorful and moist.
You can use it for sandwiches, burritos, tacos, top a big bowl of lettuce and tomatoes, and so much more
I have done mine overnight and let the children stuff pitas with the meat for school in the morning.
If there is extra freeze and use for another meal.

(not real kid-friendly w/all the veggies, but yummy!)
Slow Cooked Chicken Cacciatore
1 1/2 lbs. cubed, boneless, skinless chicken breast
1 sliced red bell pepper
2 sliced zucchini
1 cup sliced mushrooms
2 (28 oz.) cans tomato sauce
2 Tbsp. Dried Tomato & Garlic Pesto Mix
1 1/2 Tbsp. Garlic Garlic™
Prepared pasta or rice (optional)
Place chicken in slow cooker. Top with peppers, zucchini and mushrooms. Combine tomato sauce, Dried Tomato & Garlic Pesto Mix and Garlic Garlic™; pour over vegetables. Cover, cook on low for 7-9 hours. Serve over pasta or rice. Makes 4-5 servings. This is a low-carb meal when served without rice or pasta.

Slow Cooked Italian Chicken
2 1/2 Tbsp. Dried Tomato & Garlic Pesto Mix
6 - 8 boneless, skinless chicken breasts or thighs
15 oz. can chicken broth
14.5 oz. can diced tomatoes, undrained
Combine ingredients in slow cooker at medium-high heat for 5-8 hours. Makes 6-8 servings.

Vidalia® Pork Barbeque
3 lbs. boneless pork loin roast
2-3 Tbsp. Garlic Garlic™
1-2 tsp. Seasoned Salt
1 cup water
1 1/2 cups Vidalia® Onion Dressing
Place pork roast in slow cooker. Sprinkle with Garlic Garlic™ and Seasoned Salt; add water. Cover; cook on low 7-8 hours or until tender. Remove roast from slow cooker and discard water. Shred pork and return to slow cooker. Add Vidalia® Onion Dressing; heat on low for 1 hour. Serve on buns or rolls

Did you know that you can do baked potoatoes in the crockpot? Just wash nad poke each potato and then wrap each one in foil.
I have three different size crokpots so I can cook a whole meal. I put frozen vegggies in the samll one, baked potaotes in the large one and then bonless pork chops or chicken breasts in the meduim sized one and but some BBQ sauce in.
You can pretty much cook anything in a crockpot. I multiply the original recipe cooking time by 4 if I'm putting it on high or by 8 if I'm putting it on low. I dont cook anything with rice in it and only do pasta in it if I'm doing a soup and put it in for the last 20-30 mins.
Keep lifting the lid and checking on your food will increase the cook time so don't do that unless you have to and remember if your using any herbs use a little less as they get stronger in a crockpot because they steep for so long.

the easiest crockpot recipe I've found is Pepsi Potroast.
3-4 pound roast
1 envelope Lipton onion soup mix
2 cans Pepsi (not Diet)
Sprinkle roast with soup mix and pour Pepsi over top. Cook on low 6-8 hrs.
***Also great with Good Seasons Italian dressing mix and Gingerale or beer

I make an awesome pot roast! with lots of veggies!

take a pot roast and put it in the bottom of the crock pot.
add a whole bag of mini-carrots
cut 6 red potatoes into wedges and add them on top of the carrots
add 1 large can of whole tomatoes and a 1/2 cup of water.
cook 8-10 hours! YUMMY!
the meat just falls apart when it's done!

I have also added onions to this before. it's all a preference.

I love my corckpot and use it all the time. Here is one of our favs

Ginger Beef with Broccoli

6 medium carrots cut into 1 inch pieces (i used the baby carrots and just cut them in half)
2 medium onions cut into wedges
1 1/2 pounds beef round steak cut into 1/2 inch slices
1 tablespoon minced ginger
2 cloves garlic minced
1/2 cup water
2 tablespoons soy sauce
1 envelope beef gravy mix
4 cups broccoli
3 cups cooked rice
Place carrots, onion, beef strips, ginger and garlic in crock pot. Stir together water, soy sauce, and beef gravy mix. Pour over meat and vegetables
cover and cook on low for 8-10 hours OR high 4-5 hours (8-10 hours made the beef dry)
If using low heat, turn to high. Stir in broccoli. Cover and cook for 15 minutes more on high heat or until broccoli is crisp-tender. Serve over hot cooked rice.
Makes 6 servings

I just made this one, and it was yummy!

Slow simmered spaghetti and meatball sauce

7¼ hours | 10 min prep

SERVES 6

1 (26 ounce) jar of red spaghetti sauce
1 (14 1/2 ounce) can diced tomatoes
1 large onion, for 1 c chopped
1 tablespoon bottled minced garlic
1 1/2 teaspoons dried Italian seasoning
24 frozen meatballs, approx 3/4 pound
12 ounces spaghetti
parmesan cheese (optional)
olive oil (optional)
Pour spaghetti sauce and tomatoes with juice into a slow cooker.
Add chopped onion, garlic, and Italian seasonings; mix well.
Add still-frozen meatballs; stirring to mix well. Make sure meatballs are covered with sauce.
Cover the slow cooker, turn to LOW heat; cook 7-8 hours.
Just before serving, cook spaghetti according to package directions. (This can be done ahead of time, noodles drained and tossed w/ olive oil, and refrigerated. Reheat noodles in the microwave before serving.).
Serve sauce and meatballs over spaghetti. Pass Parmesan cheese at the table.
NOTE: Any style tomato-based (marinara style) spaghetti sauce can be used. The jar sizes may vary from brand to brand but this is okay.

I used turkey meatballs. If you go to the recipe zaar site, they include nutritional info. I had no clue you could make pasta like that ahead of time -- that is usually my big hold up at night, struggling with the time it take to make rice or pasta. Dinner was ready for me when I hit the door, I just ran hot water over the noodles! This recipe could be altered easily for your family's tastes, too.

I like making chicken and pork in the crockpot. for pork i buy pork roast when it is on sale or i get a big piece and cut it down. for pulled pork i put it on low in the crockpot and cook it slow for about eight hours or so. i add water of course so the meat is covered and some seasonings such as garlic powder and may be add a couple chicken bullion cubes and let it cook. when it is done it is so tender it falls apart. i then add some barbeque sauce to it in a bowl and eat it that way or on a hoagie roll or bread.

CROCK POT ROAST

1/2 Cup Water
Potatoe's - sliced into at least fourths, smaller if potato is large
Baby Carrots
Onion - dried or freshly chopped
Seasoning (Mrs. Dash or Seasoning Salt)

Put roast in the crock pot along with the carrots, potatoes, water and seasoning. Cook on low for at least 8 hours.

CROCK POT BEANS

3 Cups Pinto Beans (wash throughly to remove any rocks)

Fill the crock pot half full with water
Add rinsed beans
Add 1 Teaspoon Salt
Small pre-cooked ham diced

Cook beans and ham on high until beans are soft (6 to 8 hours). Make sure to add water as needed. (beans will soak up some of the water.) Season to taste.

Chicken dinner
Put a veggie in the bottom of the crock pot. I usually use green beans, baby carrots, or chuckwagon corn. Add quartered potatoes. Add 2 or 3 stalks of celery. Place 3 or 4 boneless chicken breasts on top. Add 1/2 or 3/4 cup of water. Pour 1 can of cream of chicken soup on top (use low sodium or low fat version if you wish). Cook for about 8 hours on low.

I use the Fix It And Forget It Cookbook. They have a "light" edition as well, but I haven't used it yet. I also get some recipes from the "low fat cooking" area of About.com. They have a section for crock pot recipes.

EDIT: Another recipe...Place chunks of zucchini and squash in crock pot. (You could also add green pepper, onion, mushrooms.) Add 3 or 4 boneless, skinless chicken breasts. Pour in a can of diced tomatoes (seasoned or plain; don't drain). Cook on low for about 8 hours. Serve over pasta or rice. I make a combination of whole grain pasta and regular pasta or white rice and brown rice.

I can either email you the names of the books, or the recipes, but there are so many. The books are great and easy to get. We use our cooker 4 times a week. I am so glad you asked this question! I am always looking for healthier crock pot recipes and have a hard time finding them. Here is one I made-up for...

Chicken Fajitas

1 small onion, chopped
1 bell pepper, diced
1 can (14 1/2 oz) diced tomatoes
3 cloves garlic, minced

mix together
2 T. olive oil
1/4 t. salt
1/4 t. pepper
1/4 t. paprika
1 T. chili powder
1 t. oregano
1/2 t. basil

Place 2 boneless skinless chicken breasts in the crock pot. Cover with oil and spice mixture and then cover with onion/tomato mix. Cook on low for 4 hours (if chicken is frozen cook 6-7 hours).

Cook times will vary depending on how hot your crock pot gets, mine seems to run warm. Just check the chicken to see if it's done.

Once the chicken is cooked, you can break it up with a spoon and then serve over rice or in taco or burrito shells.
