Costco-Size Juice
I've been buying juice from Costco for a little while now, and it took me a little while to notice that it says, "best if used in 7 days" on the label. Doh! There is NO way I use it up in that period of time. Not even close. I have one kid, who drinks one small cup of juice per day....and I still dilute it with water.
So, what I'm wondering is, what happens to juice after 7 days? And, what can I do about it? I like the idea of buying my juice at Costco, they have brands I like, and I like having the big quantity, making fewer trips to the store, etc. I was thinking maybe I could pour some out and freeze it. (I do something similar with the big Costco bag of brocolli....I steam it, then freeze it in the ice cube tray which makes great portion sizes to defrost later, just like I did for baby food back when my son was younger.)

Freeze it in smaller portions that you can use within a week when you first open it up. I do this with their pesto sauce. I put individual servings in snack bags and stack them in the freezer. You can do the same with juice. :-)

Freeze it in freezer save bags/containers and just use a little at a time. It's such a good deal to buy it there, but it can ferment after the 7 days so I hear.

Not sure what happens after 7 days, maybe it starts breaking down?
What I would do is invest in ice cube trays, and freeze the juice in the trays. Then take out the amount you will need the next in the evening and then I think you would be okay beyond the 7 days.

I would say freeze at least half of it.
Juice HAS to be refrigerated though, or it starts growing "stuff" after only a day or two. If the juice is nada but juice (like juicy juice) even if it's pasteurized (never buy unpasterized juice from a store...juice you squeezed yourself and will drink that day, fine...but not something mass produced and that sits in the back of a store for gawd knows how long before it's stocked on the shelves)...anyhow...if it doesn't have any preservatives in it, it could very well either a) go bad or more commonly b) ferment.
::blushing:: I've actually pulled fermented juice out of my fridge before. It was a couple weeks old. My mum STILL gives me a hard time for the automatic "sniff test" I do on any drink from the fridge. Then again, we were also sick with mild food poisoning at least once a month growing up...and I didn't learn proper food handling until I started working in restaurants. So....

If the juice you've been using though hasn't been fermenting, and you hold it up to the light and there are no solids floating in it, it's fine. Manufacturers use the EARLIEST date a product can go bad (if properly handled). So if it's been fine, why freeze half? Well...so you DON'T have to pour a giant thing down the drain the one time it's NOT fine.

Yeah, just freeze it! That's exactly what we do. I wouldn't worry about juice needing to be gone in 7 days, but it does start to ferment after a while. That's how wine is made! :)

Freezing it is an excellent idea. If you freeze it is ice cube trays, then you can simply take one or two out when you want to give her juice.
That 7 days is "best by" which just means that it won't taste as good after 7 days. It'll be good longer, but when it starts to smell like alcohol, you've waited too long. Best to freeze at least half of it.
