How far in advance can you peel and cut up carrots? I know potatoes oxodize but does anything happen to carrots?

1-2 days and put in water or they get slimey and weak
if you peel them, just use a damp paper towell, not soaked in water, or ssubmerged either, just store wraped in a Kroger type plastic bag, (not target tho they are too thick) and wrap it up, they will keep a solid week. not get slimey or limp, try it. that trick works with all fresh produce i found, EVEN 1/2 cut up peppers, and those go slimey fast! i think its that Bag honestly, the paper towell, just breathes enough and keeps just enough moisture! =)
PS, the baby carrotts are cut from the large carrotts and stored in CHLORINE Pools before packaged and shipped that is Why they "last" longer, but thats ALSO why if you take them out and sit them out for the day, they are all WHITE, thats the CHLORINE, please never buy baby carrots!! Chlorine is a TOXIC Carsiniogeion!

I peel, cut, and put in a storage container soaking in water. Mine stay like this for up to 5 days.
I'd go up to two days but after that they could get icky.
Well, consider the mini carrots. They are peeled but after a period of time they do start to take on a slimy feel. I would say a week, store them in a ziplock bag but you know a quick rinse is what I do and they still taste fine. I would say you can peel them and store for at least a week.
Maybe the day before. Put them in water and stick them in the fridge. That will help them to stay crispy and crunchy. Otherwise they tend to get a little limp.
I would tell you whether you cut potatoes or carrotts I would put them in a container with some water and cover it. I would say probably a few days with carrotts as they do not oxidize like the potatoes. Try the trick with some water and I think it will work for both.
