Chocolate Cake Recipe?
Hi there,
My daughter is turning 2 this week (already!). She has requested a chocolate cake. She tasted a rich, sweet cake this summer at her grandfather's birthday. I was hoping to find a recipe that is somewhat healthy for the little kids, but also tasty for the adults. Not sure if that actually exists! Please let me know if you have any recipes to share. I've found some online, but you never know how tasty it's going to be until it's too late. :)

I do not have it with me but it is probably available online, how about Chocolate zucchini cake? It is light and chocolately but has a lot of veggie in it!! smart little girl to ask for chocolate!

Hi H., I found this cake recipie on line. I made it for my nephews birthday, and now I have to make it all the time. It was really good, however it is not healthy. If you have a fax, contact me and I can fax it to you. I also have the matching chocolate frosting. The cake is called Hershey's "Perfectly Chocolate" chocolate cake. I got it from hersheys.com/recipies.

I have a FABULOUS whole wheat chocolate zucchini cake recipie from King Arthur Flour Company's Whole Grain Baking cook book. If you're interested let me know and I can post it while kids are napping. I highly sugguest this awesome cook book!!!!
2 1/2 cups whole wheat flour
1/2 cup cocoa powder
1 t baking soda
1 t paking powder
1/2 t salt
1 cup brown sugar
1/2 cup white sugar
1/2 cup softened butter or oil
1/2 cup buttermilk
3 eggs
1 t vanilla
2 cups (1 pound) grated zucchini
1 cup chocolate chips if desired
Pre heat oven to 350
Whisk together the flour, cocoa, baking soda, baking poweder, and salt in medium bowl. In large bowl stir together sugers and butter (or oil) untill smooth, then add buttermilk, eggs, and vanilla and zucchini (and chocolate chips if using) . mix well. add half of dry ingredients to wet and mix, then add remaining.
pour into greased 9 x 13 pan and bake for 45 to 50 minutes, or untill top springs back lightly or instered knife comes out clean. let cool.
this cake is so hearty you can eat if for dinner!! your guests will never know it's whole wheat or zuchinni!!

You can't go wrong with all natural high quality ingredients. Birthday cake should be an indulgence...forget about "healthy", at least for this.

My daughter hasn't been getting any sweets yet, so this is what I made for her birthday a few weeks ago. The kids gobbled it up, and the adults nodded appreciatively

I used Russian cottage cheese (tvorog) and added frozen blueberries. Spread a little extra-thick sour cream on top, sprinkled a 2 out of crushed Joe's Os cerea, and put fresh blueberries around the circumference. If I had to feed more than 12 kids, I'd bake 2 or 3 of these and layer them, and if my kid was already exposed to sugar, maybe use fudge or somesuch between layers. Hope this helps!

If you want an extremely easy and fast recipe, go online and google "absurdly easy vegan chocolate cake". This recipe is so delish and quick and easy, you'll be blown away. PLUS it makes two rounds, so it's perfect for a layer cake. It's vegan, no butter, no eggs. Just don't over-stir or it might get rubbery (as with any home-made oil-based cake). Enjoy!

Not sure how healthy it is, but the best chocolate cake I have ever had is the Hershey's Best Ever Chocolate Cake - cake and frosting (you have to do the frosting, too, or it just isn't as good!). The recipe is on the back of the can of Hershey's unsweetened cocoa powder. YUMMMMMMMM!

Also, I saw the whole wheat choc zucchini cake recipe in one of the other posts, and I am excited to try that one too. I've made zucchini choc cake for years with white flour and it has always been a huge hit. Happy to know there is a whole wheat version now!
