Brunch Ideas

Hi!
I'm planning a birthday brunch for my mother-in-law on Sunday and other than having a quiche, I'm stumped for ideas! (There will be 10 people) Any great brunch recipes/ideas would be greatly appreciated! :) Thanks!

Breakfast casseroles are always a hit. Try www.allrecipes.com for some good recipes. They are all rated, so you will know if they are good ones.
Other things I've had at brunch: coffee cake, mixed fruit, mimosas (OJ and champagne). For lunch type stuff: cheese and crackers, Ham and rolls, mostacolli or pasta salad.

Also, something that is very easy that my mom and I always get requests for is the following:
1 pkg cream cheese
1 pkg ground sausage (like Jimmy Deans in the breakfast sausage area)
1 pkg crescent rolls
Brown the sausage. Mix with the cream cheese till creamy. Roll out the crescent rolls flat. Put the mixture in the center of the crescent rolls. Pull together in pinch down the center and fold in the sides. Bake at about 350 degrees until browned on top. Let cool and cut in slices.

One of my sisters friends made what i thought were the coolest easiest things. she had different ingredients that she'd made up the night before in ziplocs.. chopped onions, green red yellow peppers, shredded cheeses, bacon (you can buy it already cooked and crumbled too), little ham pieces, mushrooms...

she had made up a big tupperware bowl of scrambled eggs ready to be cooked then she used her mini muffin pans and a little ladle. she spooned some egg into each cup then threw in whatever ingredients she wanted for each one.

voila, a bunch of different little bite sized omelets in ten minutes (baked at 350). it was so easy and so neat to have all different kinds to choose from.

Brunch is my FAVORITE meal to make for company and one thing that I always get compliments on are my fruit parfaits. In wine glasses layer vanilla yogurt, fresh berries and granola (I found that the Meijer's brand is the best). Top with Cool Whip if you'd like. I also garnish the glass with a strawberry and a piece of fresh mint. Good luck!

Fruit salsa served with cinnamon pita chips or graham crackers is always great. Just finely dice two apples and a quart of strawberries, then mash a pint of raspberries and a can of mandarin oranges, mix together...bam! A delicious, nutritious side dish!

I made these muffins last week and they were so good. I then gave the recipe to a friend and she took them on a breakfast picnic her family had. Everyone raved over them!

Easy Applesauce Muffins

6 T margarine, melted
3/4 C ww flour
3/4 C all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2/3 C sugar
1 1/2 C chuncky applesauce (or not chuncky applesauce!)

Heat oven to 375 and line or spray muffin tins. Melt margarine in microwave and then add to the applesauce. Set aside. Combine all the dry ingredients and mix well. Then add the applesauce/margarine mix. Spoon into muffin tins. Bake for 20 minutes. Makes 10 muffins.

I always take an egg-bake. It is REALLY easy, you make it the night before and everyone loves it! Just grease a 9 x 13 inch glass dish, put some frozen, shredded,hash browns on the bottom (I use somewhere between a half and a whole bag), then put any kind of shreeded cheese you want, and any meats, veggies, or spices you want, on top of the hash browns (of course pre-cook any meats/veggies, if I want to make it really easy I use the diced ham pieces from the grocery store.) Then blend somewhere between 12 and 18 eggs with approximately a cup of milk, salt and pepper. Pour this on top of the hash browns and top with any extra cheese, meats, etc... you wish. Cover and put in the refrigerator overnight. In the morning uncover and bake at 350 for somewhere between 45 minutes and an hour. Good luck!

Fruit breads are always nice, and fruit salads. Also, there's a nice veggie and cream cheese "pizza" that is easy to make: just use puff pastry or crescent roll dough and spread it in a baking dish to prebake (according to the package directions). When it's cooled, spread softened cream cheese over the crust, then add any combination of chopped red, orange, and yellow bell peppers, cucumbers, scallions, and shredded carrots. Season with sea salt and maybe some black pepper, then cut into finger-friendly squares.
