There is a place called Incredible Pizza in Mesquite, I don't know if there is one anywhere else. It is simular to Celebration Station with go carts and games but all inside. As adults we make excuses to take the kids there because we have fun too!
You could see about a bowling party at your local bowling alley, also.

I have a 14 yr old girl and they are into dance parties with dj's and the works. We 've done this since she was about 11 at least 2 times a year. The boys love it too.
Another thought is laser tag or paintball for boys.

I've heard great things about Amazing Jakes in Plano! And, of course, GattiTown in Frisco is super too!

UPDATE: Another idea that came to mind is Young Chefs Academy in Frisco. My son & I have taken cooking classes there and have attended a birthday party there. They do a FABULOUS job and it is a place I'd seriously consider for when my son is 12! Just think - they'll have fun, learn kitchen skills, eat what they make, and not have a "shoot 'em up" party. The kids will be working together and learning something, but it will NOT feel like school to them, and the chefs there know how to be goofy and have fun with the kids. The pizza dough recipe we got at the birthday party there is my FAVORITE dough recipe. We make it all the time!

Get your son involved in the planning. I'm sure he has some ideas of what he would like. Boys that age often like "hero" type activities - pirates, knights, Star Wars Jedi, Lord of the Rings fantasy, Harry Potter. Ask him.
Main Event in Plano has lots of great activities for all ages and is a fun place to have a party.

waht about something a little more mature, like a sushi resturant, they have many that are cooked, and it is allways fun wathing kids learn to use chop sticks.

There is a Planet Pizza in Plano. They have rides like a small indoor carnival, and games. They also have the inddor playground for smaller children.
